Dh said hamburgers with sautéed onions, gravy, mashed potatoes and a veggie but he's helping his brother with some work on his nephew 's new home so it may end up being something completely different. Our favorite little restaurant was closed for 2 weeks for vacation...I missed them!

Another gourmet meal at my house tonight .....grilled hot dogs, roasted red potatoes (I cooked extra the other night for later in the week), a very colorful orzo-vegetable salad , and whatever fruit needs to be used up. I didn't want to bump yesterday's thread but here's the recipe you asked for, bc2caTuscan Tuna Salad Mix together: 2 cans oil packed* tuna, drained 1 can great northern beans, rinsed, drained, then mashed 1/2 cup chopped celery 1/2 cup shredded carrot 1/4 cup chopped red pepper 1/4 cup chopped parsley 2 cloves garlic, minced Mix together: 1/4 cup red onion, minced 2 Tbsp. lemon juice 1 Tbsp. olive oil 1/4 tsp. Italian seasoning 1/4 tsp. pepper Dash salt Combine salad and dressing. If preparing ahead, reserve some of the dressing to stir in immediately before serving. I’ve served it in buns or in wheat tortillas with lettuce and chopped tomatoes. *Yes, I know, ick. But, you need the oil from the tuna to replace the mayonnaise.

I'm going out for lunch with my brother today, so chances are dinner will be leftovers from lunch. If not, there's always spaghetti casserole! so yum after three days.

I am going to a late movie today and eating lots of popcorn for $2 a bag on Tuesday. Tonight, I'm taking the kids to Sam's. They will eat pizza. I might get Thai. As an aside, but related, I saw a recipe in my FB feed for Tuscan garlic chicken with cream, chicken broth, garlic, Parm cheese, Italian herbs, fresh spinach and sun-dried tomatoes. I think I will make that tomorrow night with rotisserie chicken and linguine. Lisa

Thanks Trixie Bender - that Tuscan tuna salad looks like a great recipe to use on a no cooking night. We've been getting a lot of fresh tuna from one of DH's fishing buddies so I might try it with grilled tuna. Tonight we have a family dinner & movie date so I suspect dinner will be sushi or bento boxes. The movie is still being negotiated. The kids (19 & 17) want to see Finding Dory, I wanted to see Captain Fantastic but discovered the nearest place it is playing is 100 miles north so The BFG is second choice for me and DH wants to see The Legend of Tarzan.

Ha ~ I never did have the spaghetti and meatballs I've been threatening for a week. I THINK it's finally going to happen today. It's one of those easy things to fix if the movie we go to this afternoon runs late.

I am thinking tacos. Still too humid and hot to turn on the oven (I was thinking BLTs, but I like to cook the bacon in the oven), so this keeps the heat in the kitchen down just using stove.
On a side note, I did purchase the Instapot on the Prime deal today. Let's see if I become more motivated to cook with this little gem!

Skillet brown rice with black beans and coconut milk. It's served with a grape tomato, cilantro and lime concoction on the side. Oh, and we still have a bunch of cantaloupe, so I'll include that.

I didn't get my cornbread made last night, so that will have to wait for the next cool day. We had Fritos instead, which were quite tasty and a throwback to my childhood.
Tonight, I am hoping for grilled pork chops, with fresh steamed broccoli, and some leftover rice and tomato-onion-pepper-mushroom balsamic sauce, also leftover.

I put BBQ ribs that were smoked Sunday in the crockpot with the sauce at noon so we will have that with cauliflower and broccoli and some fruit. They were smoked Sunday but this is the first time for serving them. I hope they taste good.

Delicious stuff already posted! I am having a huge salad with shrimp on top. Dh out of town and it is hot, humid, and expensive to turn the air-conditioning down to cool off the house. I am hoping for open windows later on when I watch the MLB All-Star game.

We're having a new recipe tonight... grilled salmon that's been marinating in pineapple juice, soy sauce, ginger, onion, oil, and a dash of sriracha... with twice-baked potatoes and peas. Fruit for dessert. I'm so looking forward to it!
ETA: Just to mention... it was delicious! Our favorite bourbon glazed salmon has a competitor!
