Since I read the thread yesterday, which caused me to cook something completely different, I'm not reading before posting today Today we are having the teriyaki chicken, rice and salad we did not have yesterday

Tuscan Chicken Pasta - bacon, chicken, diced tomatoes, cream, parmesan cheese, spinach, angel hair pasta, and probably some other stuff - have to check the recipe when I get home. I just know I have everything I need for it! That sounds yummy! It is so good, and it feeds the three of us for two days!

My grocery store got bought out by a different national chain, so they're in the process of discontinuing Store Brand A products... So I had a giant package of sausage tortellini in the fridge that I got for like three bucks instead of seven. Made some alfredo from scratch and sauteed up some mushrooms and onions to throw in. It was pretty tasty. Almost didn't need the stupid pasta. LOL.

Dinner of champions...chicken tenders from the deli and a donut. Or 2. Okay...3. Not my best day! I need to get back to cooking and grilling. I'm eating like a crazy person and I feel like it.

It is so good, and it feeds the three of us for two days! I need to try it soon. Can you share the recipe, please.. TUSCAN CHICKEN PASTA (MODIFIED BY MARIANNE C) DON’T FORGET TO RESERVE THE PASTA WATER
TOTAL TIME: 0:30-0:40 LEVEL: EASY SERVES: 4 –( I GUESS IF THEY ARE HUGE EATERS!)
Ingredients • 12 oz angel hair pasta • 6-8 slices bacon, cut in half • 1-1-1/4 lb. boneless skinless chicken breasts, cut into bite-sized pieces • salt • black pepper • Garlic Powder • Onion Powder • 3 cloves garlic • 2 c. diced tomatoes (canned or fresh, I use canned) • 3 c. baby spinach – I generally use almost the whole pkg of Aunt Mid’s • 1/2 c. heavy cream (can use half and half, which I normally have) • 1/3 c. grated Parmesan (good parmesan) • Red Pepper Flakes and additional parmesan for the table
Directions
1. Cook the bacon in a large skillet until fairly crispy. Remove to a paper towel lined plate. Drain some of the bacon grease into a small bowl. 2. In the meantime, get the water boiling for the pasta and cook it while you cook the chicken. Reserve one cup of the cooking water before you drain the pasta. 3. Cook the chicken in the bacon grease remaining in the pan (add more from the bowl if you didn’t leave enough) – sprinkle with salt, pepper, garlic powder and onion powder. When done, remove to a plate. Crumble or tear up the bacon into bite sized pieces and put it with the chicken. 4. In the skillet, add the tomatoes, spinach, garlic and season with salt and pepper (and more onion powder and garlic powder if you’d like – which I do). Toss around for a few minutes, then add heavy cream, Parmesan, and ½ cup pasta water. (the remaining pasta water is so in case it is too dry, you can add more). Let simmer, then add pasta and toss until fully coated. 5. Add chicken and bacon and toss to combine. Serve with red pepper flakes and additional parmesan on the side.
