What kind of snacks and or beverages would you expect? We will have some craft beers and wine on hand, but I am not sure of the one couple drinks or not. We are trying not to have pop in the house, so not sure what else we could have one hand.
Also for snacks, I really want to keep it simple because they will be coming over after supper just to hand out and relax.
Any and all ideas are welcome.
EAT this is an adult only night if that makes any difference as to what you would serve.

I've been to a couple and there's usually water, soda, and beer for those that drink alcohol. Snacks are chips, marshmallows to roast and s'more supplies.

I would have pop and bottled water. You can send whatever pop is left home with them. Snacks, I would have chips, pretzels, chex mix type stuff, and either brownies, cookies, or the stuff for S'mores.

If it's only adults we just sit around and drink. Everyone usually brings their own. if there are kids we have stuff for s'mores. I live on a lake, so we have them often.

We usually have a variety of food like those mentioned above. For some reason bonfires make me so hungry. Like pot smoking, got the munchies, hungry.

I always have hot dogs to roast and big kielbasa chunks to roast too. (SO GOOD!) Then of course, we do hobo pies!!! So bread, butter, pie fillings/pizza fillings/smore fillings on hand to make these.
If you don't know what those are: you need a pie iron. Then you butter the bread (like you would a grilled cheese) and fill the non buttered side with whatever filling you want. We usually have blueberry, cherry and Pumpkin pie fillings, pepperoni, sliced mushrooms and shredded cheese for pizza ones, and then marshmallows and chocolate for smores ones. You put the sandwich butter side up into the hobo pie maker (or pie iron) and put it into the COALS (NOT THE FLAME!) for about 2 minutes. We spray the pie iron with pam so it doesn't stick!
When you open it, it should be all toasty and sealed like a mini pie. SOOOO Yummy. We lived on them as kids at the trailer.

Why not tell your guests that you have wine, beer and water. If they prefer something els,,feel free to bring it. We do that all the time for for get-together so. Even if we provide soda, we buy what we will drink. Those that have a specific preference ( Coke, Pepsi, diet) generally bring their own.

Water. Stuff to make s'mores Normally if we're having a bonfire it's after dinner so we'd have stuff for s'mores. It's typically the neighbors that meander over when they see the fire going (no invites needed) and they're usually carrying their beverage of choice already. But we usually will ask if they want another beer or if they need a bottle of water.

I would do the typical snack foods, like what was mentioned above. Even though this is after dinner, a gathering seems to go better with munchies. I definitely would have S'more stuff just because I love those. If you wanted to, maybe a tray of cookies too. And a couple of chips and dip and a veggie tray would round it out nicely. That would be enough in my opinion. You don't have to do hotdogs or burgers since it is an after dinner thing.
Now I want S'mores. Although, marshmallows roasted over the electric burner on my stove just losses something, you know? Who am I kidding, I'd eat it anyway. I just don't have any of the fixings. Yet.

I always bring our own snacks and drinks, but they almost always have the basics there. Beer, wine, coke (um, soda), lots of water. Then chips and cookies for snacks. We must be weird cause we've never had s'mores at any of the bon fires we've been to.

If you do s'mores, have something else as well. Not everyone likes s'mores. I hate the things. Maybe some cookies or mini cupcakes. I'd also have soft drinks to offer, but being Southern, we tend to have at least something from every drink category and way too much food for get togethers!

I would assume you are my friend (since you invited me and all) so here is how the conversation would go: You: Wanna come hang out with us at a bonfire? Me: Are you out of your mind?? It is 85 degrees with humidity like a wet wool blanket at 9 oclock at night...so unless by fire you mean the pool with big chunks of ice floating in it, NO. You: um. okay. Me: I do love you anyway. But that is because it has been hotter than the surface of the sun here, and the only fire I want to be near is ... well, there isn't one.

Do you have a wire basket popcorn popper for open flames? I can't think of the "proper" name for it. That might be fun.
ETA: WalMart has one for about $15! Campfire popper!

I would have soda and water in addition to adult beverages. If there is leftover soda it would go into the garage for next time.
As for snacks...fixings for fancy smores in addition to traditional.

We do our bonfires at the beach and alcohol is prohibited so I usually serve s'mores and hot dogs if people are coming at dinnertime. I tell people to bring their own drinks and other snacks to share if they want to but so far everyone's been pretty happy with the s'mores which are more for the fun of marshmallow roasting. If I were home I'd provide more but we also haul out the wood and chairs so people need to pitch in if they want more stuff.

This might be the first time I've read someone is serving liquor- but keep that damn demon Coke out of my home!!! I 'd offer soda because sometimes it's a treat for those who can't drink alcohol. I don't need to know guests current or past medical histories, just want to have something for everyone. When we offer something I don't want to keep around it goes home with a guest.- just like extra desserts.
