BIL and SIL are coming for dinner tomorrow. BIL had major dental surgery and had all of his teeth pulled, then had some bone surgery after that. His mouth is healed, but he is still waiting for his teeth. I am hoping that buffalo chicken sliders will be easy to eat if I shred the chicken and use soft rolls. Can't decide what to make to go along side.
(We've already had soup and cornbread for them a couple times so I don't want to repeat that.) Pasta is not easy for him to eat. Chopped up veggies are also not easy for him to eat or I'd do a quinoa salad. I'm so out of ideas. I guess I could do twice baked new potatoes? Everything I do come up with doesn't sound like it will go with. Any suggestions?
Oh, and if you have a favorite buffalo slider recipe, please share.

I would be worried about the chicken even shredded but it sounds really good. Sorry no other ideas other than mashed potatoes or ice cream .

SIL said he can eat if really shredded and not chunky. I'm having a hard time thinking of what will go well with the buffalo flavors. Dessert is easy - I'm thinking either key lime pie, lemonade ice box pie or a lemon cake of some sort or cake will work for him.

Refried beans and rice. Why not make shredded taco chicken burrito bowls?
Make the shredded chicken with taco/Mexican seasoning. Also make refried beans, copycat Chipotle's rice. Then have bowls of sour cream, shredded cheese, guacamole, pico de gallo, etc. and have people make burrito bowls. For the rest of the guests you can also have tortilla chips.
For dessert, you can make flan if you want to stick with Mexican. Or you could make bananas foster and serve with ice cream.
ETA: i wouldn't serve him anything he has to bite into to eat - even soft bread. Something he can scoop or fork into his mouth would be better.

Normally, I would think coleslaw, but... or cowboy caviar, but those would be problematic if he can't even eat pasta.
Not very exciting, but maybe he could eat applesauce or cooked rhubarb.

I guess when I think buffalo sauce I think appetizers so the twice baked potatoes would work for me. Of course I am now hungry for both .

There wass recipe posted here I think for s buffalo chicken dip that we have put on bread and it was good usually on chips but have used it in bread as well. It was really bad for you but it was good and the chicken was so mushed up that he wouldn't have a problem with it.

Give the man some mashed potatoes! Spicy black bean, or chicken soup too. That way, you all can eat sliders and he has something that won't be hard to eat!

I would not just shred the chicken, but chop it. Could you do a cole slaw with the ingredients finely chopped? You don't have to chew that. And someone else mentioned mashed potatoes, which I think would go great. Maybe cheesy mashed potatoes?

Thanks for all the great suggestions. I will definitely chop the chicken and then toss it in the kitchen aide to shred it up. I'm going to chop cole slaw in the food processor and make a blue cheese dressing for it. Also making twice baked potatoes with a little blue cheese crumbles on top, that are very mashed and not chunky. He can scoop his out of the shell, but the rest of us can enjoy the whole thing. Lots of fattening, creamy stuff going on. I feel like I need a smushy vegetable. Creamed spinach is a great idea, but I hate adding one more creamy thing to the mix. DH said to make a couple of cans of Le Sueur peas and call it good. I probably will.
