I made a great Kale and cabbage vegan salad. But I HAD to add feta. How do you do it? Do you get used to it I guess like everything else ?
Chopped Kale Chopped red cabbage Green onions Chick peas Chili roasted pumpkin seeds Quinoa
Red wine vinegarette dressing to marinate veggies overnight. Then add everything else and serve. It's very good.

You get used to it. After a while your tastebuds change and become more sensitive to the flavours in vegetables, etc, without extras like cheese or butter added. Or, there are vegan alternatives that provide some of the same salt or consistency that you would normally use cheese for. I was 99.5% vegan for about two years but ultimately gave it up.

A lack of cheese is what makes me think that a vegan diet would be really difficult for me. I know that people substitute nutritional yeast for parmesan cheese, but it's all the others I would miss.

I'm not vegan, but I'm not a fan of cheese. I avoid it unless it is on pizza. The thought of a slice of cheese on a cracker doesn't excite me even a little bit.

I make mock feta with a marinated tofu, and use Daiya for cooking and snacking. Other than the occasional grilled cheese sandwich, I mainly used cheese for cooking, so I don't miss it that much.

You do get used to it. Your palate changes and after awhile (quite shortly for me which I thought shocking) I didn't even miss it and I loved cheese. There are always substitute vegan cheeses, but I don't bother with those because the craving is gone.
It works the same with meat. After awhile the thought of eating meat grosses you out especially once you learn what it does to your body. But it is an individual choice. I recognize that and am not trying to preach to anyone. I just ask that you watch "Forks over Knives" the documentary and get educated. Learn what meat and dairy does to your body. Then decide for yourself what you want to do, or change nothing.

I've been a Vegetarian for a long time and I tried Vegan - but its hard. At the time, I was working 70 hour work weeks and it was very hard for me to find things to eat. And I didn't always have time to cook for myself. I just couldn't maintain it and eat well. While I'm not a huge dairy/egg eater, I still have it on occasion.
In my perfect world, I would like to eat Vegan only.

I could live without cheese, meat, FISH!!!, pork, but lamb and steak I would have a problem with.

I have never fixed tofu but I have eaten it in my Chinese dishes and liked it. I will never give up my occasional steak or fish. I could probably give up chicken. I also love eggs so that's a no go.

This was the oblast that I would have survived! I watch what I eat now, my body is very sensitive to meats/proteins but what I lack there I make up for in cheese, eggs and milk.

That salad sounds great... but without the feta. For me... the feta would be just overboard.
That said, not having cheese as a vegan isn't that bad. If you think about it, there are a lot of things that we eat that don't have cheese in them so it would be no different. Just all the time rather than for specific dishes.
I am a lacto-ovo veg with vegan tendencies and I find those tendencies take over and while I love my cheese, eggs, and dairy, I kind of like foods without the sometimes cloying feel and taste of cheese.
But I have no desire to be a full time vegan... part time is just fine in my book.

I have become vegetarian recently, since my other half moved in (he's also veggie, and does almost all the cooking). Cheese is a big part of our diet though and I'd like to change that really - it's not that great for you, apart from anything else. Becoming a vegetarian made me put on weight!
I guess I thought I would never manage to cook without meat, and now I do perfectly fine, so I could learn to cope without cheese. It would be hard though!

for cooking, "nooch" can give the same feel as cheese, but ... one of the many reasons I am not vegan.
