Dh has been working on a project this week and he's making rare appearances in the family room. I want him to enjoy his dinner and really be able to relax. So, I think I'll make enchiladas, but I will see what dh wants first. If he eats a heavier lunch he will want a small dinner. What's no your menu? I'm going to try a whole chicken in the Instant Pot. Then hopefully, I'll make some broth with the carcass.
Still undecided on what to serve as sides. I have tons of zucchini that needs to be used up, plus a friend gave me a huge eggplant. Maybe ratatouille?

I went into the city to the market this morning, so we have some lovely Bratwurst for tonight. I have cooked some pasta to make a pasta salad, and may make a green salad too.
@nicksmom - ratatouille sounds great. It's a pity I don't have an eggplant.

I got to get my thyroid radiated today, so I am not allowed to cook for others. I am preparing the tzatiki sauce ahead of time and dh will cook the meat.

We ended up having baked chicken, cheesy zucchini rice and roasted parmesan garlic broccoli for dinner last night. My 4 year old who rarely eats meat and who is pretty picky.. ate 4 bites of chicken. Like, that is HUGE!!
Tonight, I think I will go the easy route and make spaghetti and meatballs. I still have some shredded zucchini left so I'll add it to the meatballs. Will make a salad to go with it.

Tonight we are eating the leftover skirt steak from Monday. Will put it on tortillas for some kind of steak tacos to help stretch the meat a bit more. If there isn't enough, I will leave that to dh and ds and I will figure out something else.

I don't remember making anything with pasta recently, so I'll grab one of the many different spaghetti sauces I have in the freezer. I'll see what vegetables in the refrigerator need to be used up and steam those. And I found some breadsticks shoved in the back of the bread cupboard. Breadsticks are hard to begin with, so no one will know if they're stale or not. newlywoods03, 4 bites of chicken from a non-meat eating, picky child is huge! Congrats! That dinner sounds like it was delicious!

We are having a cool day finally(meaning not in the 105-110 heat indices) and I am craving meatloaf. That may not be the final outcome but at this point, that is what I am planning. We head out for vacation Saturday and I need to either make it simple or have something that basically makes itself while I do other things to get ready.

Well, I slow cooked the hell out of that pulled pork yesterday and it turned out OK ... not as well as my usual so now I know to stick with the cut of meat that I'm familiar with ... lesson learned Tonight I think I'll make Lemon Cream Pasta with Chicken ... it's a fav of dd#1 ... dd#2 doesn't like it though so she can have a sandwich or something

Still painting the living room, and I think we will be finished sometimes early next week. Could have finished sooner if my DH hadn't agreed to host when our Swedish relatives are visiting this weekend. BIL invited them, he knows we are redoing the living room, so why the heck should we be the ones to have them over? Don't get me wrong, I love them, but this is not the time!

Tonight the menu item I'd planned to make isn't going to happen. Yesterday when I got home from work it was 88 in the house and today it's supposed to be even hotter. Dinner will be either a bowl of cereal or fruit and yogurt. I'm officially on cooking-strike for the next 12 hours.

She said the only thing that was bothersome was the boredom. She was quarantined in one room of the house, was not allowed to touch anything in the kitchen and couldn't even see the dog. However, it was worth it, because it solved her issue. Though she is on thyroid meds for life, she's feeling great. Take good care and just remember, "It's not easy being green".

I am not sure what we are eating tonight. We might just have a chef salad with ham and cheese, tomatoes, olives, mushrooms, and dressings. It is hot today and at work where there is no ac it is unbearable today. I might change my mind later but this sounds good right now.

Haven't decided on the main meal yet but we're definitely having fresh cantaloupe for desssert. On the way home from the dentist, we stopped at a little off-road fruit stand and got two humongous melons - they smelled and are wonderfully ripe and juicy (had some for lunch.)

I got hungry early, so I dug out some of the spaghetti sauce from the depths of the freezer and am eating spaghetti right now. Since the sauce is mostly veggies I am not making an additional effort to feed myself something green.

Yum, marianne - I used to pick cantaloupes as a teen in Arizona - I still love a fresh, sweet one. I tried a cantaloupe cream pie recipe once. Just once haha. I prefer to just eat the fruit! Lots of good stuff posted today. We are having broccoli quiche tonight with fresh fruit salad. It got cooler early from a massive rainstorm. So I turned on the oven. Thanks for the thread.
