I asked because I am getting tired of even the more elaborate salads not to mention the calories can kill you if you are not watching!
I was talking about lettuce salad but on another note, I finally make a great quinoa salad that was all fresh veggies but I cooked the quinoa with some garlic and onion. It was great.

Here's my latest favorite.
Orange Strawberry Salad with Orange Dressing
1 package spring mix greens 1 pint strawberries, sliced 1 large orange, cut into small pieces 3 green onions, sliced 1 cup Sliced Almonds 4 TBS butter 4 TBS sugar
To make candied almonds: Mix almonds, butter and sugar in a saucepan over medium heat until the the butter and sugar turn to a toffee color, stir constantly.
Orange Dressing ½ tsp grated orange peel, or orange zest 1/3 cup fresh orange juice ( 1 to 2 oranges ) 2 Tablespoons red wine vinegar 2 Tablespoons sugar ½ cup vegetable oil 1 Tablespoon Good Seasons Dry Italian dressing mix, about ½ pkg.

I love all kinds of salad. I usually go for something that has a sweet and savory element. Right now my favorite it is black beans, corn, red onion, grape tomato, avocado, spinach and Bibb lettuce with homemade chipotle dressing. Sometimes I add pepper jack cheese or tortilla strips but not often.

an assortment of lettuces: mixed baby greens with dill, radicchio and my fave arugula baby carrots avocado cucumber celery radishes assorted olives from the grocery store olive bar blue or goat cheese leftover protein from the previous night's dinner or Costco's cooked shrimp from the freezer sometimes I'll throw in some nuts or sunflower seeds sometimes I'll throw in some wild rice or beans I don't typically use dressing, just salt and pepper but I've been enjoying tzatziki that I get from Costco

My current faves are:
Broccoli slaw, cilantro, cucumber, any other veggies (sometimes I add diced mini peppers, spinach, or 50/50 mix). Top with Sesame Ginger vinaigrette dressing. Can add chicken if you want.
Spinach or 50/50 mix, chicken, pineapple, blueberries, cucumber, and Vidalia onion dressing (my take on a Panera salad).

My normal salad will consist of:
Lettuce (usually a spring mix) Cucumbers Feta Grilled chicken Craisins Carrots Chick peas Sugar snap peas (if in season) Rasberry or balsamic vinaigrette dressing

Lots of good ideas here... to the point that I should make a list.
I always do romaine, egg, cheese, chicken, dressing. I'll buy spinach or other greens if they look good.
I love raw carrot, so why I don't think to put it my salad, I can't say.
I am open to having red cabbage, pepper (yellow or orange only), celery. The thing with these is I figure I can't eat them quickly enough, as I'm cooking just for me. I only like celery & peppers in small doses, too. Can I pre-cut them? It's the prep that also keeps me from being more adventurous.

Baby spinach, sliced mini sweet peppers, sliced anaheim or cubanelle peppers (if the garden is in season) sliced grape tomatoes, chunks of rotisserie chicken, feta cheese, bacon bits, sunflower seeds and tortilla strips. With raspberry vinaigrette or sesame dressing. I almost always have salad ingredients in the fridge. Everybody loves them.

If you have a costco membership, try the kale salad. It's in the refrigerated produce section in a bag. Comes with a poppy seed dressing, pumpkin seeds and craisins. It's delicious!

I really like raisins in mine. My salads don't quite taste the same without them. I have also found that I love Poppyseed dressing (but you have to be careful with that...they don't all taste the same, IMO). I was feeling bored with salads too until I tried the Poppyseed...now I love them again!

Tonight we had baby spinach, a bell pepper, red onion, cucumber, zucchini, black olives, feta, some tortellini, and drizzled it with oil & vinegar dressing.
It was way, way more vegetables than pasta, so I don't really think of it as a true pasta salad, just a yummy salad in general.

I'm one of those people who likes everything but the kitchen sink thrown into my salad. Off the top of my head, though, some of my favorites are:
cucumber tomato carrots craisins avocado hard boiled egg cheese chick peas olives sunflower seeds
Nothing too unusual. I just like a really loaded salad. Preferably with blue cheese dressing.

I use 1/2 fat free mayo, 1/2 cup of greek yogurt, juice of 1/2 of a lime, 1 clove of garlic, 1 large chipotle pepper in adobo sauce (seeded), salt and pepper. Just blend and refrigerate for about an hour. Will last in the fridge up to 2 weeks.
