I sometimes fix a simple salad that is very good. It is romaine lettuce, mandarin oranges, red onion and raspberry dressing.

Lettuce, cucumber, radishes, boiled eggs, bacon, green pepper, and I cannot forget the feta cheese. It's just not good without feta.

Flour, sugar, butter, eggs, milk, vanilla, oh, wait! That's what's in a cake. I'd much rather have cake than a salad.

I had a delicious salad last night - spinach, mache, goat cheese, proscuitto, figs, drizzled with a honey-balsamic vinaigrette.
Another favorite is mixed greens, hard boiled egg, avocado, tomato, cucumber, and whatever other vegetables I happen to have on hand and sound good.

So simple but one of my favorite salads ever when I was younger and not very adventurous with veggies:
ice cold iceberg lettuce, cut not torn ice cold celery, diced very small ranch dressing made from the Hidden Valley packet with buttermilk, also very chilled.
Now that I've grown up a bit, I love a salad from Tyler Florence that uses lots of dark green mixed lettuces, sugary-spiced, toasted pecans, pears, and his special vinaigrette. I'll look it up and link it if I can. He calls it a fall salad and it is so yummy!

I had a salad the other day that had roasted beets and roasted/grilled peaches on it - so good! The crumbled up some goats cheese there, and there was a dollop of pesto too... It came with a simple oil/vinegar/herb dressing but there was a drizzle of balsamic reduction that really gave it flavour...
Think because it's summer, I'm loving any grilled veg added into a salad (cold/leftovers)...
Eggs are making it into my salads more often too - hard boiled or poached...
Other stuff: Mini pepperoni slices Mushroom - raw, canned, sautéed Fresh herbs - cilantro, dill Olives Sliced almonds, walnut pieces Sliced steak Grilled chicken Taco sauce or salsa Mango, red onion, cilantro, and some tamarind (?) marinade that I use to cook Thai chicken
Every once in a while I'll do a one bowl salad with leftovers - lettuce, whatever veg is around, toss in some leftover pasta/noodles, leftover beans, etc... Not gourmet by any stretch but I've come across some combinations that I like and wouldn't have planned on otherwise...
