Today busy Monday will be taken to a whole new level with last minute back-to-school errands and haircuts on top of appointments. That means sandwiches tonight. I don't have weekly acupuncture until tmw. So, I might have time for a post busy day nap.

Lazy day for me, as it is a public holiday here, and DH has gone to Sweden for work this week.
I have some turkey breast in the fridge, which will do for my protein. Not sure what else I'll do - I probably should start thinking about it, as it's after 6pm, but I'm not really hungry yet.

Sloppy joes, oven roasted potatoes and corn on the cob. I also need to grill some turkey tenderloin and make chicken parm for lunches this week.

It's pretty dang hot here so I went with a new to me salad I found on Pinterest. It's a BLT pasta salad. Romaine, bow tie pasta, tomatoes, applewood smoked bacon and a BBQ ranch dressing. I'm looking forward to giving it a try. I don't think I've had a salad that has both pasta and lettuce before.
I also made some crockpot BBQ chicken last night so tomorrow's dinner is covered as well.

I think it's going to be leftovers of the Chicken Biscuit casserole we had on Saturday, with leftovers of the corn off the cob that we had on Sunday.

Country Style ribs in the IP. A little uneasy about this one because the recipe calls for 3-4lbs of ribs (10-12 ribs). I'm not sure where they are getting these tiny country style ribs from, but 3-4 lbs of country style ribs is 4 ribs where I buy mine. I bought 6, but now I am not sure about the cook time. Any ideas?

Sounds like a weird texture to me and I always chickened out at the last minute and served the pasta salad on a bed of lettuce. Let us know if it's good when mixed in!

If it is the beef with broccoli from pressure cooking today, it is awesome! The only thing I did differently, was that I doubled the sauce. (Increasing it by half would have been plenty, but my brain did not want to figure out 1.5 times 3/4 cup and then figure out what line that was on the measuring cup after working all day)

Trying to dry out from all the rain - we are very thankful that we did not have as much flooding as the surrounding area have or are having. We had corned beef hash, peas, mashed potatoes, tomatoes, cucumbers and bread. It was good.

I can finally breathe from my crazy pace this summer. Work has slowed down to a brisk pace instead of the full-on sprint I was running all of June and July.
I really cannot believe that the kids are back in school already. Summer went way too fast, and of course, it's still hotter than blazes here. Sigh.
I have only one child present for dinner tonight. I think that I will just make him waffles with bacon.
I am happy to be back - I have missed posting and missed you all.

We are going to have BBQed chicken wings done in the pressure cooker. Along with that we will have corn on the cob also cooked in the pressure cooker. We also have a head of cauliflower that needs to be cooked up. Everybody's meals sound so good. Kelleem congrats on your new place and on using your IP.

Yes. Everyone's meal sounds delicious.
We are having leftovers. Rigatoni pasta with pork was so yummy last night and I am glad we are eating it again.
Today is our daughter's cat's birthday (16!!) so I made a rhubarb custard pie for dessert for the humans hahahaha.

I don't know! My dad is here from FL and we were planning on going out for dinner with my daughter and her family and my sister & BIL. My daughter's car broke down(they live 1.25 hours away) and my sister got delayed on her way back from northern MI. I guess I will just cook something because it is pouring down rain and I have my great grandson. Darn it!

I took out a couple of steaks for tonight and plan to do baked/roasted veggies to accompany.
However, I've been off work for 105 days due to illness and today is my first day back. I am SOOOO tired. I may just make a bowl of cereal and call it a night.

I'm going to the store later in the week to get the stuff to try it. Let us know how it was! Everything here is hatch peppers right now so we are having chicken quesadillas with hatch tortillas, guacamole and queso with chips. Using up some grilled chicken fajita meat that I froze a few weeks ago.
