Hey everyone! I stayed in bed to read for awhile again this morning ... I could make this a weekend habit I think Tonight dh and I are going to a friends place for wine and cheese ... no wine for me though We'll have dinner before we go ... I'm making ribs in a tangy sauce, mashed potatoes and tossed salad ... a meal that everyone will eat which is amazing What's on your menu?

Have fun tonight, with or without wine, leannec. Dinner was mackerell, cucumber salad, potatoes and sour cream. DD loves fish (weird kid), and will have leftovers before she goes to bed (we eat dinner at 4 pm, so the kids need an evening meal).

Feta and herb crusted salmon with a Greek arugula salad. We've had this one before, and it is really good!

DH and I are heading out to the Iowa State Fair later this afternoon, it's the last day, it's half price admission and the high today is only going to be 76 degrees...my kind of weather! I plan on splitting an Ultimate Bacon Brisket Grilled Cheese Sandwich with DH, probably shove a corn dog in my mouth also and then something sweet....either the fresh strawberry ice cream one of the concessions have or a Coconut Toasted Coconut Carmel Cluster. Tomorrow I plan on going to the gym.

We're having Italian sausage and tortellini prepared in the Instant Pot. Some crusty bread and a side salad - it's better than Olive Garden!

It's my birthday today, so my husband is cooking dinner tonight. Rib-eye steak with sauteed mushrooms and onions, baked potato, some kind of steamed vegetable and I'm making a side salad to go with it. For dessert we are having leftover strawberry shortcake.

Not sure. We had hamburgers for lunch and if I get my way, fried chicken from our local grocery store for dinner. They have the best chicken!! Then we will pick up slaw from KFC. I have cooked since Friday a week ago. Taking the night off tonight.

Yesterday I was at a crop at the LSS and we went out to an Italian place (okay, it was Mary's) for lunch and ate the leftovers for dinner. Absolutely no clue what's for dinner tonight. Maybe just a sandwich. The 7yo isn't here until later tonight and I don't feel like cooking or planning a meal. If they drop him off before dinner, I'll figure out something. Happy birthday, bklyngal62!

The boy and I had Arby's for dinner, yesterday, after dropping my dad off to visit with his friends.
So, today, I am going with something not substantial. Thinking scrambled eggs and toast.
Since it is just the boy and I, it works.

First things first... thanks much for the birthday wishes yesterday! And, Happy Birthday bklyngal62! Have some leftovers in the freezer that need attention so think I'll fix a beef pot pie with leftover pot roast and veggies. Got some beef stock to make gravy and a Bisquick top crust. It's a plan!

Alton Brown meatballs (modified). We all love these meatballs. I made 72 of them today and froze 2 batches (48) for later meals. Between leftovers, lunches, and the boy snacking (he is almost 15 and his favorite snack is "meat") the 24 I left out of the freezer will likely only last 2-3 days!
I also made 2 dump bags of chicken recipes for the pressure cooker and have a few meatloves in the freezer. School starts tomorrow and I am trying to stay a step ahead of cooking!

We are really off on our mealtimes today. We had some appetizers from BW' s to tide us over until dinner. Unfortunately, by the time we finished errands and g it home with the food, it was after 2. DH and DS play softball tonight, and would need to eat dinner by 530, but I don't think anyone will be hungry!

We had company and ate out three times since Friday, so tonight it's homecooking for the win. I had some personal meatloaves in the freezer so we are having meatloaf, twice baked potatoes and brown sugar carrots.

I think we're doing what'll probably be our last grilling of the summer. Steak marinated in Dale's sauce, pasta salad, and bacon cheddar red potatoes done in the crockpot. For dessert we'll have peanut butter blondies with dark chocolate chips.
What's left of the potatoes will be mashed up tomorrow and used in a pork BBQ casserole recipe I'm trying out.

I made pot roast in the Instant Pot with potatoes, carrots and green beans. This morning I made rice pudding in it. Dh is thoroughly impressed! I'm hungry but we're waiting for dd to come home from being out with a friend before we eat.

Update on tonight's dinner: my sister brought me a tray of asparagus and German potato salad left over from her DD's graduation/going-away party yesterday (that I skipped to go scrapbooking instead ... bad sister, bad auntie, but I did have permission). So now that's what I'm going to enjoy for dinner!

Taking a pizza to my cousin and his wife. They just got home from a rush trip to Baltimore as their new granddaughter (4.5 months old) started having some seizures. Thank god their daughter caught them. They are treatable and will not inhibit her life at all. (She was staring into space for a few seconds at a time). Being the special ed teacher that she is (I am also), she and her husband immediately got her to the hospital.
