Today its busy Monday and that also means acupuncture right before dinnertime. So, Mondays tend to be easy dinner nights, because I'm so relaxed. I'm thinking chicken mozzarella. We haven't had it in a while and youngest ds loves it.

Oh geez, I have to cook again I'm planning on Creamy Chicken Penne ... everyone likes it so that is a plus But it is still only 9:16 am so things could change

Last night's weird meal timing resulted in some weird meals. Dh and I are on vacation thks week moving ds to school later in the week. We just got back from breakfast, so dinner will be fairly early, since we won't have lunch. Anywaaaaaaaaay, we are having brats with peppers and onions in the instant pot. Probably just chips to go with.

We are on the road driving back home from our cabin. We'll get home at dinner time so I think we will be having a pizza and a salad.

Soccer practice tonight for the girls so that means a late dinner - 7:45 or so. Dh has a super stressful week at work and it's cooler today (high of 74) so I'm going to make one of his favorites - homemade chicken pot pie.

this is back to school week, and I am mourning the loss of the carefree summer days and un-regimented meal times!  We had Costco roasted chicken last night for dinner so its leftovers. Chicken, steamed rice, and steamed green beans. I did some meal planning yesterday so hopefully this week should go smoothly with dinner.

I went shopping this morning, and I bought steak and sausages - one of them will be for tonight and the other one for tomorrow. Simple sides - pasta, salad, depends a bit what's in the fridge. We're heading off on vacation Wed am, so I don't want to buy to much fresh stuff.
Update: today was steak, fries and salad!

It's leftover beef pot pie for us tonight. Not sure about dessert, if any. Pot pie is usually filling enough.

Anyone ever made salmon salad sandwiches? I have some leftover salmon and I thought maybe I would flake it like tuna and make salmon melts. We'd have some red grapes on the side, maybe some corn on the cob. If you've made salmon sandwiches, please share how you do it!

I love to cook. But I play at keeping house...when I have company, it's a full meal with something special friend dessert. I don't cook or eat like that myself every night. If I had the responsibility of providing meals for other living creatures every day, I'd lose my sh$t. Esp the first time somebody complained they didn't like something. Setting bowls down twice a day for my pups is plenty. So hats off to you ladies who do this full out every night. Or even not full out! I grew up with most night being fend nights once I hit about 11. (We lived with my grandparents from age 4 on after my parents split. My grandfather passed away and we (mom, grandma and me) never sat down together for a meal at home again (!). We were basically fend for yourself from that point on...lots of hot dogs and grilled cheese. If I don't run out for something, I'm defrosting some turkey taco filling I made a couple weeks ago. Not exciting but satisfying. T.

It's our last week of summer vacation and I'm so not ready! I'll miss my cuties and I don't want to set the alarm haha. We're going to try to pack as much fun into this week as we can!!
It's our family dinner night - BBQ pulled chicken sandwiches on brioche buns, roasted potatoes, green salad and coleslaw.
The boys and I might make something for dessert.. off to figure something out.

I'm getting ready to go away for a few days so the cupboards are pretty bare. I picked up some deli roast beef earlier so DH is getting hot roast beef sandwich and a veggie of his choice. Me, I'm living on salads until these remaining few pounds disappear. Hopefully all the walking we will be doing this weekend will help.

Anyone ever made salmon salad sandwiches? I have some leftover salmon and I thought maybe I would flake it like tuna and make salmon melts. We'd have some red grapes on the side, maybe some corn on the cob. If you've made salmon sandwiches, please share how you do it! When I have leftover salmon, I make salmon patties, rather than salmon salad. I usually sauté some onion and garlic, and mix in the flaked salmon, breadcrumbs, seasonings, and an egg. I serve them on buns with mayo or ranch dressing.
I still have some ground beef in the fridge from making spaghetti sauce over the weekend, so I think I'm going to make a skillet dinner of some sort, with fresh steamed green beans on the side.

We kind of had a fend for yourself weekend. We had a family party on Saturday so we didn't eat until the late afternoon and yesterday we had a smoothie for lunch and eggs with cheesy sausages for supper. So it's back to after work cooking again.......I have nothing out for supper but I am pretty sure there is stuff for tacos so that might be what we have. Or maybe rice with chicken. Geez I am so not in the mood to decide what to cook........

I'm making something we call Chicken Buns...but I really need to think of a more appetizing name for this dish. I finely chop some chicken breasts and combine that with some onions and softened cream cheese. I plop this into a flattened crescent roll, shape into a crescent, dip it in melted butter and then bread crumbs and bake. I'll find some veggie as a side.
