Hello RefuPeas!
I've done some quick googling, but everyone knows the Peas real life experiences trump google any day! ;-)
So, we are new to RVing, but have tent camped forever. We need some new food ideas. Dinners, lunches, all of it. We'll be at the lake for a few days over the 4th of July holiday week.
We have the RV kitchen, kitchen stuff as well as an outdoor gas grill you can use as a stove or grill. Charcoal grill at the campsite and the campfire.
What are your favorite lake/RVing or 4th of July meals/recipes?

Check out the "Campfire Cones" that are all over Pinterest. A friend of mine made them on a recent camping trip, and she said they were a hit.

My husband's favorite campfire recipe - roll an apple in a mixture of cinnamon and sugar. Put it on a stick and hold it over the fire until the outside carmelizes. Roll it in the sugar mixture again, then back over the fire. It's a candied apple on a stick!

I'm not a huge camper but I do love to grill!! There are some excellent pins on Pinterest for camping food.
I do love to grill some potatoes and they are super easy. You just wash em and bake em like you normally would. You can do this in either the stove on over a campfire the night before wrapped in foil. After they are done, you slice them lengthwise but on the short side so that you have two "boats" basically. Put a few knife slits on the top and brush some melted butter on top then shake some Lawry's on that. Place them face-down on the hot grill at an angle for about 10-15 mins then rotate them the other way to get some good grill marks on them. Grill for another 10-15 mins or until they are pretty done on top. Put some butter, sour cream and enjoy!! You can also do shredded cheese but I like em with just the sour cream.
I also love to do some pork tenderloin because I can usually grill 2 small ones and have plenty left over for sandwiches the next day. I usually marinate them in Hendrickson's Dressing / Marinade but I can only get that at my (very) local grocer. Really, any marinade will do. I also like to do the tenderloin because it doesn't take up a lot of space in the fridge / cooler.
I love to grill corn on the cob too. I usually do a lot so I can eat some that meal and save 4 ears for a salad I make. All you do is brush some mayonnaise and sprinkle some salt on shucked corn and grill it for 15-20 mins or until done but not too done. I love Crazy Jane's Mixed Up Salt - great seasoning for eggs and just about anything. Once the corn is cool you will cut all the kernels off into a large bowl. Add some feta, lime juice, cilantro and some red onion if you'd like and mix it all together. I also add some grape tomatoes sometimes. I might also add a dash or two of chili powder or even some green chilies if I'm doing a Mexican dinner. My family loves this salad and can be eaten either cold or warm. I'm actually making a huge batch of it today!!!
If I think of some other camp-y food I'll post later.

One thing I like to do is bring a jar of a favorite marinade )I do a nome made one but you could do ready made too) and then toss a flank steak in a ziplock bag with the marinade in the morning. At dinner time, put the flank steak on the grill to medium rare, let it rest a few minutes and then slice thinly. This goes great with other stuff you might be grilling also like potatoes, corn on the cob, etc.

Boyscout potatoes is one of our favorites. Better than baked and perfect when camping. Don't have a recipe but in this order.
Tin foil, pat of butter on foil, 1 cubed potato, garlic powder, salt and pepper, pat of butter on top cubed potato. Perfect on the grill, takes about half hour to 40 min. I usually check them, as we like them a little crispy.
With large potatoes, I usually split into 2 foils.

We do a lot of dutch oven/campfire cooking...chili, chicken and rice, money bread (YUM!!), but also love our pie irons. There are tons of recipes you can make in those over the fire.
We also use the crockpot a lot, too (is that camp cheating???).
Pinterest is a great resource, as is the RV.net recipe section.

Bring a crockpot. But we've bought a cast iron pot to make stew. Grill corn. Make shishkabobs. Banana boats (stuff a banana with marsh mellows and chocolate and wrap in tin foil, roast on the fire)

We are RV camping this weekend and here's what we're having: cheeseburgers on the grill, Doritos bag tacos, nachos with homemade guacamole and a big breakfast of eggs, sausage & biscuits. Also brought stuff to make s'mores, a veggie tray, fruit and lots of snack stuff. This is only our second trip in the RV, but we learned on trip one to bring a lot more food! The boys act like they are starving when we are away from home!!! ? Now I want to try the candies apple on a stick that Nicks mom mentioned!! Sent from my iPhone using Tapatalk

I like to prep as much as possible so I don't have to cook much. These are the things on our menu this trip: fried chicken (cooked the night before we left) potato salad macaroni salad romain lettuce for salads, sandwiches, tacos taco meat (cooked and frozen night before we left for tacos or nachos) hamburgers & hot dogs kabobs steaks & baked potaoes
On other trips I've made and froze spaghetti sauce, chicken and noodles and teriyaki chicken. I like to use the crockpot or grill outside.

We like to make omelettes over the campfire. Have your ingredients (cheese, ham, peppers, onions, tomatoes) in separate containers so everybody can add whatever and how much they like. Put two eggs (doesn't work as well with 3 eggs) in a quart size FREEZER Zip Lock bag and add your ingredients and seasonings. Squeeze the bag to mix well. Then 'burp' the bag to get all the air out. Be sure to write your name or initial so you know which one's yours! Place 4 or 5 bags in a pot of boiling water and boil for 14 minutes. Remove from water and open carefully so the steam doesn't get ya! They roll right out of the bag and taste yummy.

I like putting sloppy joes or goulash in the crock pot when we go to our cabin. That way, when people are hungry, they can grab it when they want it and I'm not cooking all day long.

We grill pretty much everything when we are camping... well besides cereal or portrays for breakfast and sandwiches, chips and fruit for lunch! All dinners are thrown on the grill (veggies and meat). My particular favorite is hobo packs on the grill.

I love my crock pot for camping! Yes I have an RV, but I don't want to spend my time cooking. I cooked and froze stuff before we left. Then I dump it in the crockpot to warm it up. I made 3 lbs. of taco meat and Italian roast beef (Burning Feather's famous recipe). I love being able to just get out the sides and setting up a little buffet.
I can say that we do the foil packet cubed potatoes a lot too. We do them at home on the grill sometimes too! We should be camping neighbors with one big buffet

I think my favorite camping meal is the french toast my DH makes. He loves to bake and will make homemade raisin bread from scratch. (it's his grandmother's recipe) and then we make french toast with it. It is so yummy!
We also usually do chicken and veggie kabobs, pulled pork in the crock pot...which we split into two meals, pork tacos one night and pulled pork sandwiches the next, of course there are always burgers and hot dogs.
I love camping and am bummed that we only get to go once this year. Hope you have a great time!

I try and prep as much as I can ahead of time so that I can enjoy the camping too! Tacos and taco salad are always a go-to for us. We usually do omelets the next morning to finish off the taco toppings. We often camp at the beach, so we get local seafood/fish and cook it over the fire on a wood plank. I am not a fan of anything from the water, but DH loves it. Italian marinated pork chops or chicken on the grill is delicious. I usually make a pasta salad for an easy side or quick lunch.

We're camping this coming week too. We love to make eggs for breakfast: scramble a dozen eggs + milk + a box of defrosted, chopped frozen breakfast sausage (already cooked) + shredded cheese on top. We cook it in a throwaway pan usually over the gas grill. We always make pizza over the grates on the fire pit. Be careful because the bottoms burn fast. Chicken skewers are always on our menu too. I usually spear chicken + potato cubes + thick onion pieces and brush with BBQ sauce. This time, I am bringing along some pineapple chunks to add on there before grilling. Hobo stew is something the kids love to prepare. We spray sheets of foil, top with chopped meat, canned potato slices, corn and green beans. Put a BIG spoonful of creamed soup on top for yummy flavor. Seal the foil up and cook right in the fire. We always bring our pie irons and make sandwiches for lunch. Either grilled cheese, toasted PB&J or melted turkey/ham & cheese. Make sure to butter the bread well and check for burning. We are trying a new (to us) Pinterest favorite this trip: Walking Tacos! Individual-sized Dorito bags, crush them up, pop open and top with taco meat and all of your usual toppings. We have shredded lettuce, tomatoes, salsa, sour cream, avocado and shredded cheese. I will say that we did Campfire Cones last trip and hated them! They burned quickly and didn't taste good. Good ol' Smores are much better.

We try to have what we call "double duty meals." If we make fajitas one night for dinner, the next morning we'll use the leftover peppers, onions and beef (if there is any) to have migas - scrambled eggs with cheese, peppers/onions and tortillas chips smashed up, salsa, etc.
We also love to do roasts in the dutch oven and try to pick up some local ingredients for a meal as well. For example, when we're camping close to where we can get good seafood, we'll pick up some and do a seafood boil.
Have fun camping! We leave tomorrow and can't wait.

I try to make stuff up before we leave or use the crock pot. I buy the suddenly salad classic mix, make it and add ranch dressing, tomatoes, cucumbers, spinach and julienne carrots. You can add ham, pepperoni, chicken etc. We also do a lot of grilling. Hot dogs, burgers, salmon. ETC I also try to make up pancake mix ahead of time and put it in ziploc bags. then cut the tip off and squeeze into the pan.
The one thing I will not cook at the RV is pasta. It takes forever to get the water to boil.
The eggs in the ziploc bags sounds great, I need to try that.

I just made up a batch of breakfast burritos today to take on our camping trip. They can be warmed up in a microwave, on a grill or in the oven. No mess but you get some protein to start the day without much effort.
i also like to clean and prepare my veggies like carrots and celery sticks and pack in ziplock bags. I wash and bag my lettuce. I do this also with some fruits like melon. Saves time so you are free to enjoy the camping instead of always getting meals going or have a snack ready to munch on.
If you are having grilled chicken breasts prepare them at home, pound to even thickness and marinate in a ziplock bag. Freeze and pack. The day you want to serve them make sure to thaw them and they are ready for the grill.
I also like to make up a pasta salad with fresh veggies like cucumber, tomatoes, celery, etc and cubed cheese and sliced pepperoni...put in a ziplock and it is ready to serve. The bag takes up less room in the cooler or refrigerator than a bowl.
i also like to divide up meat products like brats, breakfast sausage and bacon into amounts that I need for one meal. I freeze it in the portions so I only need to pack what I need and only need to thaw the amount needed for that meal.
I also like like to cut up cheese and salami so I can serve it in minutes. Easy to pack in a cooler to grab for the beach or a road trip for a snack with some crackers.
lots of things you can do to save time and space in your cooler or fridge. Just plan your meals ahead of time so you can do as much prep at home as possible.

There are some GREAT ideas on this thread! We have been camping many times, and I have NEVER ever thought to bring my crockpot! What a wonderful idea. We're going for a week in August so I'm going to remember that idea. Also, I have brought dry (homemade) pancake mix and added the milk and eggs at camp, but never did I think to mix it up ahead of time and put it in ziploc bags! That is genius!

You can also put pancake mix in condiment bottles, although the opening may be a little small. I have a waffle bottle that has a wide-ish opening. I think I got it at Williams Sonoma. I haven't used it at the RV yet, but I may pack it for this weekend.
