We have a very late and long appointment that will require playing in traffic. So, we'll probably pick up sandwiches on the way home just to have a quick, late dinner.
What's on your menu?
Have a wonderful day everyone.

I hate playing in traffic! DS has a Fantasy Draft at work so I have a small flank steak I'm going to grill for DH and me.

No idea at this stage, even though it is nearly 6pm here. I met a friend for lunch, and we had Thai, which was what I was thinking of making - not sure I want to double up even though it would be a different dish. Also, not feeling really hungry after big, late lunch. I might end up with eggs on toast.

It's sushi Tuesday for me! DH is gone this evening, so I plan to enjoy an early dinner and some trashy TV.

I don't normally make gravy when I make Italian Beef, but last time I apparently did because I found some in the freezer. So, dinner tonight will be Italian beef in gravy, rice, sauteed green beans and carrots with shallots, salad, rolls, and strawberries, blueberries, and pineapple. I went grocery shopping super early yesterday and must not have been fully awake and thinking clearly because I thought it was a good idea to buy 12-lbs. of chicken. I've already boiled and shredded 4-lbs. and I have 4-lbs. in the crockpot magically turning into Cafe Rio Chicken. I've never made it before but it looked good. Pinterest is evil. Not sure what I'll do with the remaining chicken.

Tonite is a bit crazy as DD has Futsal from 6-7 and I have to be at Open House at the HS at 7, so yesterday we grilled chicken, steak and a bunch of veggies and made sure we had plenty of leftovers for tonite.

Yesterday, I made a homemade Bolognese sauce with eggplant, mushrooms and turkey Italian sausage in the crockpot for dinner today. I'll be serving it with rigatoni so the noodles can "catch" the sauce in the big holes. I think we'll have a wedge salad with creamy Italian dressing also.

I don't know but I need to serve it at 5:00 with this new tae kwon do schedule. I tried 5:30 last week but that boy dawdled so much through dinner that we were practically late to TKD. So I figure we'll skip his usual snack after school (unless he asks for something) and just eat dinner super early.
Anyway, I'm headed to the dentist in a few minutes. It's near Costco so I'll stop there for gas and dinner. Maybe that cilantro lime shrimp. Yum.

lucyg, the dentist is something many of us dread. Wishing you an easy and fast appointment. Don't forget to choose a toy from the toy chest.

DH will have the leftover ziti from Sunday night, and I will probably either have a grilled ham and cheese with pasta salad or leftover mac and cheese from last night. Tomorrow will be tricky because we have a tight schedule and were supposed to have leftover pulled pork from last night, but it was so bad that we trashed it. Better get thinking!!

I'm going to clean out the fridge and make sure any produce we haven't used yet gets used by making a chicken "dump" soup. It sounds terrible but it always ends up tasting good.
Grocery shopping tomorrow ...

I was going to grill a steak tonight but it's so darn windy I think I'll just do Steak Diane instead. Baked potato and a salad and we're good to go.

We're having DH's favorite bacon and kale crustless quiche. I swear that man would stage a revolt if I didn't make it every couple of weeks. I'll probably cut up some fruit and mix it all together with a squeeze of lime juice.

I tutor on Tuesday nights which means I usually try to gobble down a sandwich en route and DH will be at home enjoying yesterday's chicken and dumplings.

Found some old pork chops in the freezer - grill them and pour some bbq sauce on them and we are good to go. Will open a can of baked beans and doctor them up. Probably finish off the sourdough bread (which is old by now) and have some broccoli, too. I am making lucyg 's malted cookies later on. And I bought some Ghirardelli bittersweet chips for them! We'll see if they last until we leave on Saturday hahahaha. Thanks for the thread.

So last night, I was trying a new recipe for hot and sour soup, which DD10 LOVES. The final step was adding a teaspoon to tablespoon (your preference) of sriracha to the simmering soup. Instead of measuring I thought I could just squirt a little however the pressure I put trying to make a little bit come out, caused the who cap to come off, and about 1/2 cup of sriracha went into the soup. No way to save it, though it was quick to make I had all ingredients but chicken broth. So we're going to try and make it again tonight.
