We've tried both versions in our house, and we prefer the sour cream sauce.

I agree, we prefer the sour cream over the cream cheese. If you do go with Kevin and Amanda's recipe, I would definitely saute 1/2 a finely diced onion and add chili powder to it at the end of the saute (and adobo if you have it.) Otherwise, the chicken doesn't have a lot of flavor IMO.
Sour Cream Chicken Enchiladas is the most requested birthday meal between the kids and grandkids.

Cindy, I had posted the wrong recipe and deleted it. 😋 I will take enchiladas anyway I can get them. Yum! Jen OHHHH!! ha. disagree with the gal that said to add more spice. We think the rotel is PLENTY!! but then again, remember we are MN spicy...ha. which is none!
