Can of corn Canof Black Beans Small box frozen spinach small can sliced olives 18 regular size corn tortillas Large can Enchilada sauce 20oz Recipe did call for shredded chicken, so you could add if you wanted Shredded cheddar Mix corn, beans, spinach, olives and chicken with half the can of sauce. Put down a layer of tortillas in a 9x13, usually 6, they'll overlap Put down half the bowl of mixture, top with some cheese Another layer of tortillas and rest of mixture and more cheese Add top layer of tortillas and pour on remaining sauce
Cover with foil and bake 20min, then uncover and sprinkle on some more cheese and bake another 10 min, uncovered.
It's easy, you could probably leave out a lot of the cheese and it would still taste pretty good, and be much healthier.

Do you have to thaw and drain the spinach first? I'm thinking it might get too watery without draining it.
