Yesterday I summoned the energy to make leannec's creamy chicken Penne. It was so good that even pickiest, pickiest eater had seconds. I highly recommend it. Tonight I think I'm going to make a new chicken and rice soup recipe. I have peppers from the garden that I must use before our garden goes kaputz. Thank you once again for all of your kindness this week. I am sorry if I didn't respond to each comment personally. I'm still pretty darned tired, but very grateful for my dinner family. There's a reason this is such a friendly thread each day. What's on your menu? Have a fabulous Thursday.

I'm still on my own, so I picked up a Thai Massumam curry sauce. I'll brown some meat to add to it and cook up some rice. I also think it have some Roti in the freezer.
I had a great day today. We've had a little one at my mini-kinder who has had a great deal of difficulty with mum leaving, and today he cried for a little while, then went and got a puzzle from the shelf and started playing quietly. He was them happy for the rest of the session - ate his snack, played with others, sat down for story and craft. When he left at the end of the session, he smiled and waved at me and the other carer. Days like this make all the mess and tantrums worthwhile.

Rest well, scrapmaven. Dinner was marinated salmon and couscous (and I added most of the vegetables I had in the fridge, so I will probably have to shop tomorrow). Tomorrow I'm thinking about making soup of some kind....it's 5 C and an ice cold wind here, so perfect weather for soup. Have a nice Thursday everyone (while I go back to painting).........

I think I will pull out the chili from the freezer tonight. I will stop at store to get corn muffin mix and make that to go with. It's cold here, so that will be perfect food. And SO has the man cold...fun. Just keep in mind this was the same cold I had last week but was still able to function.

Some friends invited us over for dinner tomorrow night, which is our weekly pizza night. So the kids voted to have pizza tonight.
I will not object to that, since it means I don't have to cook for two nights in a row! Yay me!

I pulled out a marinated skirt steak from Costco from the freezer. DH will grill it and we will have steak tacos - If I had any peppers, it would be fajitas, but I don't, so tacos it is! If you are at Costco and they have these (which they did the other night- I just didn't need any more), you should get them. Arranchera, I think is what they are called.

Cold here, too. We are having egg salad sandwiches with homemade pesto mixed in and some Trader Joe's red pepper soup that I'll doctor up somehow.
And I got some good apples from the local Mennonites. So, cut up apples with caramel sauce on top.

I get to go out and celebrate a friend's birthday tonight! Yay! So I'm hoping to something new and yummy to try. My poor family will probably get stuck with leftovers or frozen pizza. I didn't get to make my green tomato salsa yesterday, so that's in my near future if I can will myself to turn off the computer. Sounds like everyone is having chilly weather today. Stay warm and cozy!

Tonight is PWs one pan sausage bake. I will have gf turkey sausages, baby yukon gold potatoes, bell pepper, sweet onion, carrots. Not sure if I will fix anything else to go with that. Maybe a salad?

Have a nice Thursday everyone (while I go back to painting)......... This is a time where I am glad that no one else is depending on me to feed them. I had a big salad for lunch, so I will likely eat some kind of quick sandwich because...PAINTING. My interview from last week was rescheduled for tomorrow, so bright and shiny early tomorrow morning I will get to don my non-painting clothes and go forth out into a world where people are not painting and talk about stuff that isn't colors and taping and painting techniques and hopefully win myself a new job. Y'all do what you do-pray, vibe, dance the dance of the bare breasted women under the full moon because I really need this job. If for no other reason then maybe I can hire someone to finish all the dang painting I set myself up to do.

We were supposed to have meatloaf but I have some errands to run that will take up most of my afternoon. I should have done them this morning but the bed was SO comfortable that I ended up sleeping in. So I'm thinking something that will be quick and easy. Hot Sub Sandwiches, Chips, Salad and Ambrosia. My son loves the stuff!

I am doing This Old Gals Cream Tuscan Chicken which very well may be like leannec chicken dish that was posted earlier but mine will be cooked in the Instant Pot. I am going to cook some potatoes to go with it and some broccoli. We will see how my picky DH and DS fare on this dinner. If they don't eat it, I think that will be fine and means more for me!

First, I want to thank each of you for your P & PT for my furbaby, Pepper. He did not move for five straight hours after we brought him home from the vet. The neighbor had called telling me to meet her that she had b'day cake from her DH's birthday. I asked Pepper if he wanted to go with me and he did not move. I was telling Ms Deen about Pepper and crying when DH opening the carport door and said 'Can someone come out' and out trots Pepper. Ms Deen got as excited as I was - she told him to wait she had something for him - roast beef from one of our famous po-boy shops (Short Stop for those familiar with NOLA). He ate all the roast beef, did his business and then rolled in the grass. However, he didn't do much after that. This a.m. he has had three pills and is feeling so much better. He is eating again and the med causes him to do his business a lot more than normal. So thanks again to my pea dinner family.
Today's dinner was veggies, corned beef hash and cornbread.

I'm still getting used to my new part time job so my schedule has been a rollercoaster lately. While I plan a meal daily, it doesn't always get made that day. So today we are having yesterday's dinner because yesterday we had tomorrow's meal. In any event, we are now having a pot roast, mashed potatoes and broccoli with gingerbread and applesauce for dessert. Unless, of course, I change my mind.

I'm making meatloaf. 4 people, a 3 pound (plus) loaf with sides, and I can guarantee there will be enough for one person to take to lunch tomorrow. My family loves meatloaf...it's amazing. Not sure on the sides yet. Maybe some baked potatoes, simple and they can go next to the meatloaf

I thought it was a helicopter and was wondering why a helicopter would roll in and give you a headache  (so says the girl that gets blinding headaches every time the barometric pressure drops with a hurricane...)

Last night I claimed I would make dinner tonight, but that was before this LONG day kicked my butt. We had turkey sandwiches, chips and grapes tonight. I laid out everything and then it was YOYO. I did see some awesome recipes on the thread this week which I've cpoied and may try soon. leannec, I know what a chinook is because I lived in eastern Washington for awhile! You could see, feel, and even smell them coming in.
