My DH had an endoscopy a few weeks ago. His esophagus was highly inflamed. Doc suggested allergy testing. He went today and they say he showed allergic reactions to apples, avocados, corn, wheat, rice, and peanuts. I have read a book on the food connectioins to eczema and read the theory that grains are what is causing my eczema so I have toyed with the idea of going grain free myself to see if it controls my eczema. Now that DH has had this testing I am thinking we will both try going grain free. My problem is that I am not a very good cook. We eat a lot of stuff like tacos, hamburgers and pasta. I am hoping for some suggestions of cook books, or blogs, or websites where I can get some ideas of dishes I can cook. I don't want to resort to meat, potato, vegetable every single night. Any feedback would be appreciated. I have to say I am definitely going to miss carbs.

To be honest, with DD not living home, and the new micro wave packages of potatoes, including sweet potatoes, I do make meat potatoes vegetable rather often. If it's a thin cut of meat like steak that cooks on the grill in 15 mins and during my that time I micro the veggie and potatoes.
To me it's a quick dinner.
But, if you don't like that sort of thing you can make a pilaf substituting cut spaghetti squash for the rice. Tastes great, even my picky one liked it. We've also done fried 'rice' out of cut spagettiv squash. It is work it cut it, but I cut across it before I peel/scoop the strings out and I don't care if they are all different sizes

Learn to embrace your grill. I grill everything outside. We are gluten free (unless sick) and we get by just fine. Tonight we are having BBQ chicken, DS will have rice and salad, something green and tomatoes. Learning to grill is so easy. I just put the food on and started by checking it every 5 minutes. Now I do it by instinct. I haven't roasted a leg of lamb YET but I plan to do so. Going carb free is not the end of the world. You adapt very quickly! Good luck!

I would look into paleo recipes. Some of them will have ingredients you can't use but most of them are peanut, wheat, grain, corn, dairy free. Well Fed, Well Fed 2 are good but there are a lot of others as well. I like those two because she talks a lot more about cooking/making meals than just the recipes. She also has a new one coming out "Well Fed Weeknights"

I just checked to see when that new book will come out and it's November 1. I already pre-ordered. I also saw this just now and wonder if anyone has seen it? ETA-never mind. That one is a pretty-order as well.

Wow, that is a big change. But you can do it one "recipe" at a time. I also would only consider "simple" recipes. I know you can do this!
Try googling Persian, African and paleo recipes. These recipes are often gluten free (grain free) and simple to boot.
As far as pasta goes... They now have pastas made out of black beans, red lentils and chickpeas. They have these at my local Walmart in the gluten free section. It may not work for you in the long run but it might be an easy substitute until you find better recipes.
As,far as what to do tomorrow? How about... Wash day stew?
1 1/2-2 pounds of lean lamb or beef, cubed (if your grocer has beef stew meat, it is already cubed!) 2 cans garbanzo beans, drained 2 cans white beans, drained ( white beans? Use navy or cannelloni) 2 medium onions, peeled and quartered 1 quart of water 1 ts salt 1 tomato peeled and quartered 1 ts turmeric 3 Tbs lemon juice 4 baked potatoes
1. Combine the first 8 ingrediants in a slow cooker. (Aka throw it in and give it a quick stir) 2. Cover, cook on high for 6-7 hours 3. Add lemon juice
Serve over baked potatoes
As far as the peeled tomato... You could take a big short cut... Buy a can of whole tomates, open, take one out and quarter it right in the slo cooker with your spatula.
Just an fyi-corn aka dextrose is in everything, read those labels!

So many choices, you will never be bored and it is all very easy to cook.

Against All Grain is one of my favorites, along with Elena's Pantry. I picked up paleo cookbooks at the library to get ideas of what to eat. It is hard to break the potato/rice/pasta habit but there really are fabulous & easy recipes out there. We are having pasta with a tomato/spinach/meat sauce tonight and I also cooked spaghetti squash because DH & I either skip or go really light on the pasta. I'm not fooled into thinking the squash is pasta, but like the texture and way it takes the sauce.

Thanks so much for the suggestions. And I really appreciate the words of support. This is going to be a huge change for all of us and your confidence that we can actually do this makes me feel better about this change which I'm really apprehensive about because I am a poor cook. And houston249 thank you for telling me that I can get a pasta substitute. Pasta and peanuts were really going to be the biggest challenge for DH. For me it's bread.

I'm not grain free but these are some things I thought of, or things that I eat regularly that don't have grains. I've seen a lot of cauliflower substitutes for things like rice and pasta (I saw a cauliflower fried 'rice' recipe the other day on pinterest, or just regular cauliflower ). - I haven't tried these but I do like using cauliflower to substitute for chicken bite type things. You could also try the spiralized noodles, I haven't tried these yet but people seem to like them. Soups like chili, squash, potato, etc. I like egg things like fritattas, crustless quiches, egg 'muffin' bakes, etc. Curry type sauce over cauliflower or spaghetti squash, stuffed peppers, I've seen things like cauliflower pizza crust and carrot taco shells but I haven't tried them. We've also done lettuce wrap tacos instead of shells, and you can do that too for anything you might wrap in some sort of tortilla/wrap/etc., or burgers wrapped in lettuce. I hope these are some ideas you might be able to work with! My husband has a dairy allergy so I have learned to be creative, but there is so much info out there now, pinterest is your new bff!

I found this website when I was looking for a new vinegar to try ( my son has a problem with apples and i have a sensitivity to corn) vFyi-vinegars maybe gluten free but they are not apple or grain free (white vinegar is made with corn). Hidden grainIt has a lot of info. Please, please remember this change you are making is not an over night process, don't let the information overwelm you. You have to crawl before you walk. You can do it!

I haven't read all the replies but wanted to say a bit about eczema....I'm 51 and have suffered with it badly most of my life. Red itchy skin from head to toe, sometimes bleeding, flaky, etc. Not sure what happened, but over the last couple of years maybe it all but disappeared. So weird. I do have some discoloration from spots where it was but I used to have to lather up in lotion anytime I took a bath (short baths or showers are recommended with luke warm water). I say all that because I have never really paid attention to my diet much as far as nutrition, etc. I regularly eat white pasta, rice, etc. It could be worth a try to eliminate it for your situation but just wanted to share my story. I still have dry skin but I'm sure glad I don't have the constant itching anymore.

I'm attempting to go wheat free but not totally grain free so some of my substitutes are on his "can't have" list. But, what I know that will be helpful to you: check paleo sites for grain free ideas. I do a lot of de-constructed meals; for example, tacos without the shell and use a chip I found in my market made from quinoa and black beans but I don't know if they are also corn/rice free. I have a hamburger sans bun or on a gluten free bread. I have found pastas made with things other than wheat (sorry I can't recommend my fav since it is rice based) There are things made with tapioca, almond, coconut flours that are good subs. I make a crust less pizza (low moisture mozz shredded in the bottom of a small non stick skillet, heat to melt the cheese and let it get slightly browned on the bottom. Sprinkle with Italian seasoning and garlic powder. Top with favorite pizza toppings other than the tomato sauce) Once the bottom of the cheese is a golden brown slide out of the skillet onto a cutting board. Let cool slightly and cut into wedges. If you really miss the tomato sauce on the pizza serve a small bowl of marinara sauce to dip your cheese slice in.

For tacos you could do lettuce wraps or this product (the Ezekiel one) which I've used but since it's so fresh, it has to stay in the freezer and I never feel it's quite as soft and bendable as a regular tortilla.
