Live from club med...I'm supposed to be discharged today. We shall see. They found the problem and tried to fix it overnight. Meanwhile, dinner is a non issue.

A lovely autumn Thursday here. We had a fun day at kinder, even though we didn't get to carve pumpkins like I planned. A lack of carers due to illness meant we had to merge two groups (fun - one English speaking, the other German!!), so too many to safely carve.
I was meant to be going around to a friend's house for dinner, but she is one of the sick ones, so I'm on my own, as DH isn't back until after 9 tonight. I have a vegetable curry on the go, which should be ready when I want to eat in an hour or so.

I hope they really have figured out the problem and you are able to go home. There is nothing like being at home, in your own little nest when you are feeling awful. So last night I never did get around to dinner, and am starving RIGHT NOW. So I decided dinner for lunch and then rest of the day will take care of itself. I am, however, also still dealing with the painting project from hell, so it has to be quick. I have some frozen raviolis and jarred alfredo sauce and...boom bang bing...I will be able to eat in about 10 minutes. Sounds healthy too, right?

Hope you can go home today, scrapmaven. It"s grey and rainy here (the same as yesterday, and the day before, and....you get the idea). I'm not in the mood to cook, I would much rather curl up under a blanket with a book, a cup of tea and lots of chocolate, but, being a responsible adult, I did cook. Meatballs in sauce (hakkebøff, which is the Danish variety), peas and potatoes. And since there was a tiny piece of chocolate cake left, the kids had that for dessert.

I would have hid that bad boy, made up a story about dropping the plate and having to throw it away and then eaten it myself after their sweet little heads hit the pillow.

We're having French Onion Meatballs, mashed potatoes, roasted broccoli, cauliflower, and carrots, salad, and rolls. (I said we were having that on Monday, but I ended up going with Plan B (Cafe Rio Chicken) that night, so meatballs are tonight.)

Warmed over soup (did you notice I didn't say 'leftover' soup). I may add a grilled cheese and DH can have the warmed over cornbread. It is supposed to be 'cooler' tomorrow like in the high 60's (which is cool for us).

We are expecting snow later this afternoon. I am feeling crabby. I have to take my mil out for a few hours today (dr appt. post office, bank etc.) I am not really in the mood.
Dinner??? I am thinking cube steak and mashed potatoes and green beans. Not very exciting but it will do.

The two kiddos have PTA District Level Awards Ceremony tonight so it will be an easy, quick dinner of tostadas. Going to prep all the toppings in a bit and cook the shells so all I have to do if heat up the beans.

Okay, leannec , I'm using that avocado salsa recipe for sure tomorrow night - grilled elk steaks are on the menu then and will be good with that! Thanks! I just made pasta salad with tuna, black olives, grilled artichoke hearts from Trader Joe's, cherry tomatoes, and a delicious Parmesan vinaigrette. It will sit in the refrig and get all tasty before supper. I am also thinking of making a lemon cake. I only have one lemon so I have to peruse the Internet and see what's out there. While I'm at it, there isn't much meat left on that chicken carcass, so I may add canned chicken, too. What is this world coming to?! We have a fresh batch of zucchini muffins from my neighbor to go with it. scrapmaven, hope you get bailed out today. And start feeling better!

lucyg - no chicken stock. No "fresh" chicken. Oh the horrors!!!! Continued well wishes and healing prayers, scrapmaven. I am planning to make omelettes and bacon for the kids tonight and then take the darling urchins to froyo. I had a FASFA meeting for my oldest last p.m. When it ended, I ran into Sam's to grab my two and an extra child pizza and churros. They were happy. I had eaten a late lunch, so I munched on leftover popcorn. I also bought a premade Asian salad and a roasted chicken. I will be putting some of that chicken in my salad for lunch and likely skip dinner. Except I will be eating froyo. Lisa

So I have Beef Stroganoff on the menu. It's a pretty simple meal to prepare. Which is good because I decided to come back to bed and get a good nap in. So tired today and I am not going to even fight it and push myself to be productive. Resting is just as important so that's what I'm doing. And if I don't get to making dinner? There's enough leftovers for us all to feed off of tonight. No one will starve.

Hey! DH is having breakfast for dinner too. He's eating biscuts & gravy, eggs, and fresh pineapple. I'm having a more calorie friendly open face turkey sandwich and pineapple on the side. I also have a pot of vegetable soup on the stove which I made with store bought chicken stock. lucyg, I did so without a second thought. The soup is for tomorrow. We are FINALLY getting some cool weather. scrapmaven, they better be treating you well there! I hope you are home soon.

I had a nice little package of carne asada in the freezer so I'm cooking that like a regular beef roast and I'll probably throw some small red potatoes and sliced carrots in with the roast later this afternoon. Meanwhile I'm going to mix up a batch of pumpkin bread with craisins for snacking on tonight and tomorrow.
