Change of plans here because I forgot that dd#1 starts her new job at Starbucks tonight so won't be home for dinner ... I'll make the Teriyaki Bowls on Thursday when she is home Instead, I'm giving a Facebook recipe that dh suggested a shot ... the dude hates most things made with ground beef but he loves bacon so hopefully they cancel each other out Stuffed Onion Bombs ... I'll serve them with a Caesar salad ... definitely not a healthy meal tonight but who the hell cares sometimes right? Welcome to the new hell of menu planning, also known as 'adjusting our dinners to accommodate those who may or may not be here on different nights every week'. It's a blast. And in case anyone's wondering . . . no, I do NOT cater to my children's wants at dinner, lol. The older one is only home 2 nites a week to eat (he works at a restaurant and gets fed there), so I try to make something he likes on the nites he's home. Doesn't always happen, but I try. I left hubby in charge of making chilli in the slow cooker - came home to find the slow cooker had been on the keep warm setting for 3 hours So I put it in a pan on the stovetop We eventually had chilli and brown rice - he tries Oh dear. This is not giving me much hope, lol. In a few weeks I'm going away for a scrappy weekend and I thought I'd leave chili premade in the crock in the fridge, leaving them to only have to put it in the heating element and turn it on. Guess I'd better make sure I leave explicit instructions! Love Stevie Nicks! Have fun, kimpossible! Guess I should actually post what we're having for dinner, huh? Chicken parm, mashed potatoes (trying the Hidden Valley Ranch recipe since mine don't usually like mashed, but love ranch - wish me luck) & green beans.

Autumn weather, soooo.......autumn soup with bacon. please reveal what "autumn soup" is! Vegetable soup Mostly potatoes, carrots and leeks, and whatever other vegetables I have in the fridge.

I'm not sure. Both boys will be home. I am thinking about pork chops because I haven't made them in forever. I am a bit nostalgic today. My favorite theater - translated dive-y and cheap - is closing on 10/30. A brand-new Harkins opened right by me, and they apparently are not even trying to compete. I will miss $2 popcorn on Tuesdays. Such sadness. I am going to see "Girl on the Train" tonight. I might even sneak in another movie this weekend although the weekend looks pretty packed already. Well, I came here knowing dinner had to center around rice. The chicken/veggie/rice ideas just might work for me. DH will be pleased. I'm usually not home on Tuesday nights and he's scraping together leftovers. Off to see what's in the freezer that will work with rice.

Finished up our pile of apples with two more batches of applesauce in the IP earlier today, so not going to spend a lot more time in the kitchen. We'll have loaded baked potato soup from the frezer, green salad, and a hunk of cornbread. Not sure of dessert, if any. ETA: Welcome jeremysgirl!

I didn't have a clue until I walked in the grocery store. I had wanted enchiladas but they are work and I didn't want to do that. Hmmmm, chicken enchiladas with a creamy sauce. Again, a lot of work. Oh my chicken enchilada stack. Perfect!! I'll adapt it to a casserole sort of thing. So we are having that, Spanish rice with corn and some chips and salsa that DH just picked up. Now, don't laugh at this but this recipe is from when I was in high school and I got it from Seventeen Magazine. I graduated in '82. I used to do it just like the recipe. That was a lot of work. Then I decided to skip the frying stage. I then decided 2 shorter stacks made more sense. I have made the mixture and put into tortillas and made regular enchiladas. Tonight we are trying the casserole route. We shall see..... Here is the recipe in case anyone wants to try it. Chicken Enchilada Stack

The verdict is in -- it's delicious! I'm just tickled that I found a good & easy & Whole 30 (I'm pretty sure) compatible yellow curry recipe. (I'm not doing a Whole 30 right now, but I do like to try to keep our eating along those lines if possible)

I sauteed onions, cauliflower and green beans before tossing in yesterday's leftover flank steak and Trader Joe's Multigrain Blend. Fast & easy tonight. JoP, I'm pretty sure DH would have done the same with our rarely used crock pot. kimpossible I'd be happy seeing either Stevie or the Pretenders, both is great! @scrubologist, thanks for sharing the yellow curry recipe. naby64, I love that you are using a recipe from Seventeen! It looks very much like something I've made, only the tortilla's aren't fried and they are ripped into pieces to make tortilla layers that fit a 9x13 pan.

I am having some kind of addiction problem, because I want a reuben AGAIN tonight They are quite big so I don't think they would make a great appetizer ... I added fresh parsley to the mix and left out the BBQ sauce (because I don't like it ) ... I made 6 of them and they turned out pretty good ... 400 degrees for 50 mins ... we dipped them in Diana Chicken and Rib sauce ... I'm not sure if that is available in the USA
