Why do all the recipes call for chicken broth?
Seems odd to me to make ground beef with chicken broth. Any tried and true pea recipes for cheeseburger soup?

I just realized that I had the one that was posted on the old board's soup thread... Should have bookmarked that! LOL! Based on memory, most of the ones that first come up with google are close. I remember it having more parsley and mustard though. Hopefully someone else actually copied it. I think it was originally posted by Lauren
That said, I always just substitute beef broth for chicken broth. If I only have chicken on hand, I'll use it. I have a cream of garlic soup recipe that is the only one I can tell the difference with. But, it is good either way, just different.

To me, beef broth has a much stronger beef taste than chicken broth has chicken taste. The "cheese" part of cheeseburger soup is the soupy part itself, and that cheese flavor will come through over the chicken broth much better than over the beef. You get the burger flavor of cheeseburger soup from the chunks of hamburger.

The chicken broth gives it a little lighter taste. With all the cheese - it can get overpowering (I back off on the Velveeta a little bit).
It is a good soup though. I try to keep the ground beef in larger chunks. My friend makes it with small beef meatballs.
I also just use a bag of the fresh hashbrowns in it, instead of diced potatoes.

I've found that you can always use chicken bullion with beef or pork but never beef bullion with chicken or pork. Like others said, beef bullion is a much more overpowering taste than chicken bullion.

So this is the basic gist of it. allrecipes.com/recipe/13131/cream-of-garlic-soup/ We up that garlic by double (like 3 heads of garlic give or take) and also include roasted garlic cloves (not blended). Your colleagues will know what you had for dinner and it is so darn good!!!! If you really can't handle garlic, just roast it all first and 1. it is easier to get out of the head 2. it isn't as garlicky. It's an easy soup to make but boy it can take forever to peel the garlic.
