Tonight we're going to have Giada's chicken meatballs and Orichiette pasta. It's one of those rare meals that everyone enjoys. Picky eaters suck. I hope we have more happy news on the board today. I really enjoyed our celebrations yesterday.
What's on your menu?
Have a delightful Tuesday.

Baked chicken and roasted cauliflower tonight 😊 Jambalaya last night was fantastic. My Madre always says it's best when cooked "low and slow" and I tried my best to be patient, but I still have to work on it I just want everything to cook fast and be ready!

Today is going to be Ham & Grilled Cheese Sandwiches, Tomato Soup, Pickles and Chips. Apple Slices and Chocolate Caramel for Dessert. No fussy dinner prep tonight! Yay! Today, my guys and I are going to a matinee to see Doctor Strange. Reduced ticket prices, Free Popcorn reward coupon, excellent company and a brief escape from election fatigue! I am determined to have a good day. 😀

I'm having fish and chips tonight. Simple and fairly quick. Once again, I'm just feeding me, so I can eat what I like.

Me and SO ended up with oatmeal and toast for dinner, daughter had cereal and toast. Easy peasy!!
Tonight I should probably make something. Basketball starts tonight, so I have until 6:30 to make something presentable! Now, what to make? Maybe I should try those chicken drumsticks that was posted yesterday...

Baked, marinated salmon and couscous. The kids love it, as long as they can have ketchup on it, and it's healthy, so everyone was happy. But I think I will make waffles (or vafler, as we call the Norwegian ones) later when we get hungry again. I have some yoghurt and cream in the fridge that really need to be used before they walk out of the fridge on their own.

Braised steak with onions and mushrooms, mashed potatoes, broccoli and cabbage. I think we had this the same time last week but the grandchildren are here every Tuesday and this is easy to throw together. They are currently eating turkey drummers, fries and peas. Not the healthiest but again easy. How on earth I managed to look after my own family and child mind up to 5 other children for years is beyond me.

We're having shredded buffalo chicken in buns, potato salad, and coleslaw vinaigrette and creamy coleslaw (to make the all the coleslaw eaters happy). I agree with you, scrapmaven. Picky eaters do suck and the celebrations yesterday were fun.

We took out chicken drumsticks this morning and I'll be home early enough to cook so I may make the recipe posted yesterday. Due to Friday being a paid holiday I have shortened work days this week!
ETA: The drumsticks were a huge hit with my family!! I also cooked rice and corn and we had a tomato/cucumber salad as well. Delicious dinner!😊

In this house, election night = pizza night. But I might compromise on Chinese take-out instead. And the chicken drumsticks last night were delish and so easy (again). I think you guys will love them.

I am working a volunteer position this evening (not election related).
The hubs is taking the daughter out for a daddy and daughter date.
I will eat leftovers when I get home.

Fake Thanksgiving dinner, part 2. I have the turkey, just have to decide if I want to make another pkg of Stove Top, or make some gravy (from a packet) and do Hot Turkey Sandwiches.

I'm making baked Scotch eggs tonight since I have boiled eggs already, it is a family favorite and easy. I'll sauteed broccolini and there are leftover roast vegetables from yesterday.

I'm taking a friend out for her birthday/goodbye dinner. She is moving across country in two weeks. But we will have a lovely time at a local Mexican restaurant and they have the BEST margaritas! Perfect for election night!

We'll have spaghetti and garlic bread. I have to make a run up to the airport at 7:00 to pick up my aunt (it's a quick 20 min trip) I want dinner eaten and cleaned up by the time I leave for the airport, so I can come home and enjoy watch election coverage.

We're having the vegetable beef soup I made the other night. DS has a deadline with one of his accounts so might not be home at the usual time so that works out well. DH and I are eating pork tenderloin and mashed potato leftovers from last night for lunch today. He just voted and ran into friends at the polling place ~ the senior center ~ and the friends tried to talk him into joining them for lunch there. Evidently it is quite tasty and only $3. Might have to remember that for when we don't have leftovers. It is awesome for people whose spouses have passed away. Lunch and some social time.

Meatball grinders with friends. I made the meatballs yesterday and I am not sure what we are having with it. I am on vacation but I had to vote and get my flu shot today, so it has been a painful day all around. Sadly the flu shot will probably only be painful for a couple of days but I am afraid voting will be painful for 4 years.

Something I love about our thread is the reminders I get for one thing or another. I must buy some tater tots (thank you, newlywoods03 ) and I need to get my flu shot (thank you, compeateropeator). And our election night meal is always soup. Tonight is beef and barley. I'll also have a small spinach quiche. Thanks for the thread.

Light meal at our house tonight - tomato soup, open faced grilled cheese, salad. Then I'm going to watch a movie and anything else I can to avoid any and all ad nauseam election reporting. I'll watch the 11 pm news and some late reporting... that's about as much as I can take.

It's a comfort food night. So I am trying something new - Creamy tacos. Ghirardelli double choc brownies for dessert.

Likely a hodge podge of whatever is in the fridge, unless my husband decides to cook.
I have another paper to write and a test to study for. That's just stuff that is needed for tomorrow.
ETA: I'm here because I just finished another homework assignment and needed a quick break of not homework.

I had the day off today so I spent some time making zuppa toscana soup. DH liked it. I thought it was pretty tasty too.
