With such good cooks on this board, I thought it might be fun to start a thread with ideas for all of the Thanksgiving leftovers. I love this recipe for Chicken Pot Pies by the Neeley's. I don't make them individual, but instead put it all in one casserole dish and cover with puff pastry. I think I will substitute in turkey for the chicken. Chicken Pot Pies

I use it to make "turkey" chicken salad sandwiches We also use it to make up several pot pies for the freezer.

Fully loaded Thanksgiving sandwich. Mix the cranberry sauce with mayo, spread on the bread. Add in sliced turkey, stuffing, lettuce, sliced cheese.
Turkey rice soup
Potato pancakes
Turkey tacos

We just finished eating our annual turkey pot pie. I make it the day after Thanksgiving every year, and we all actually prefer it to the Thanksgiving meal. Here is what I do: Patter's Turkey Pot Pie(uses most of your leftovers; I don't measure just dump all the leftovers) Turkey (chopped) large bag of frozen mixed veggies Stuffing Gravy Turkey drippings Salt and pepper 3 cups Bisquick 1 cup skim milk Put gravy, drippings, and veggies in large pot. Begin to cook down. Add chopped turkey, stuffing, salt, and pepper. Cook completely. Make crust using the bisquick and milk. Put turkey mixture into glass baking dish. Size will depend on how much you have leftover. Tonight I used a 9x13 glass pan. Put crust on top. Bake at 425 for 15-20 minutes until crust is golden brown. Let sit for 10 minutes. Serve.

We didn't have much left this year. I made some potato pancakes tonight, I boiled the carcass and will make some turkey soup with a Mexican flair and DH will make some turkey and dumplings.

We freeze the dressing and later enjoy it with chicken.
Of course there is turkey tetrizzini.

Turkey noodle soup.
Thanksgiving wraps--turkey kept warm in juices, on a wrap with cranberry sauce and stuffing. So good!

Make a plate of leftovers and give it to someone who is homeless/hungry. Just an idea. Several people in my community are doing this today.

Stirfry with the cooked chopped turkey thrown in just to heat. The veggies were leftovers from the crudités.

This afternoon I made a quick turkey and tortellini soup for lunch. Tonight I"m going to try this recipe for turkey spring rolls by the Pioneer Woman. She uses cranberry sauce mixed with some soy sauce and chili oil for the dipping sauce. Spring Rolls

I just layer it all up in a casserole dish with the mashed potatoes on top. Bake it like a shepherds pie. Kinda sorta like a white-trash cooking version of Patter's pot pie
