Said with sparkling eyes and I know you will get me exactly what I want face except I have no idea what she wants and neither does her mom.
So any suggestions?

My first thought was beanie boos but upon Googling there is a toy called Bright Eyes that looks similar.
Eta they have them on Amazon and they're as seen on tv, so I know that if she watches commercials she probably wants one, my niece always wanted stuff like that.
Eta upon rereading you said your niece had sparkling eyes not the toy, so I agree it could be one of those parade light up toys.

My kids had toys like this that they got at Disneyland during the parade. DS had a Buzz Lightyear one and DD had a princess one. Maybe you could find a character one on ebay? Disney Spinning Toy |

Does she have a sibling or cousin she needs to shop for? Perhaps you could take her shopping at a toy store for them, while you're there you can ask. This way she doesn't have the expectation for the gift herself. Bonus, you get some shopping done and get to spend some time with her.
