Busy Monday has been canceled due to the goings-on this past weekend. We have a crew outside working on our yard as we get a new faux lawn and they will do some work around our veggie beds in the back. We had a complete landscaping job several years ago and we called them back for some touch up work. So, I have to get better and get into baking mood, because this company sends out great crews who deserve cookies.
Meanwhile, dh is going to make dinner tonight. He's making a new lentil soup and homemade cornbread. I predict much snarfing at dinnertime.
What's on your menu?
Have a fabulous week everyone.

Homemade pizza, and for dessert we had redcurrants from the freezer (handpicked this summer by moi) . Busy day here today, so I think I'll make strawberry cupcakes with DD later.

We're STILL working on Thanksgiving dinner (I made a 14lb bird for 4 people). I threw the carcass in the crockpot last night and tonight, I'll use the broth to make Turkey corn chowder. It's supposed to be stormy tonight, so a nice big bowl of soup is going to be perfect. I may try to do some homemade bread if I can get home in time.

I'm thinking meatloaf in the pressure cooker.
Usually I serve mashed potatoes with meatloaf, but after our carb overload all weekend long, I might need something less carby. Mashed cauliflower perhaps?

I roasted a 15+ lb bird for 3 people. There is some turkey divan left for lunch today and some turkey that I will freeze for soup. I'm thinking pork chops or pot roast for dinner.

Simple dinner here tonight. I'm making beef fajitas, just because we haven't had them for ages.

I think it will be a repeat of last night...ham and baked macaroni and cheese. I'll forego the broccoli casserole.

It's windy and rainy today, so we are having warm comfort food...chicken fettuccine with peas and garlic bread. MMMM.

No cupcakes today *sigh*. DS needed help with his Spanish, and although both DD and I really, really, REALLY wanted cupcakes, school is more important. Maybe I should make them tomorrow when the kids are at school........

SO is home today, his car is in the shop (and it's not going well...) maybe he will make something. But, he has to do with what is there since he can't get to the store! Otherwise, it will be something quick when I get home. We will see what happens! Meatloaf sounds good, maybe I will do that tomorrow night.

I am considering having the boy make pancakes. Not sure I want pancakes though.
Put buffalo chicken dip in the crock pot this morning. Came home to discover I did not put the knob on low before I left. I did switch the knob. However, this one has three settings...one that shifts from high to low, high, and low. I forgot about the three settings and moved from shift to high.

Thank you all for the kind wishes for my son's wedding yesterday (and sorry for bumping yesterday's thread). The wedding was very nice and the weather was lovely. I haven't gone through the photos yet, but maybe I'll post something once I do. I tried to get a cute one of the 7yo and me for Christmas cards, but he was making faces and trying to find a "cute one" of me is kinda hopeless at this stage of my life. It was a Jewish wedding and they served brisket for dinner. I don't think the girl who catered knew what to do with brisket. It was flavorful but tough (not cooked long enough). They had bought 120 lbs of brisket for 100 guests, so there was tons left over. So I brought home a foil pan of brisket and put it in the crockpot this morning ... I'm determined to make it as tender as I know it should be. I thought I'd get more for my freezer today but apparently they found a charity that wants the leftovers. I'm happy for the charity but sad for my freezer. hee They also threw in a bunch of leftover mixed roasted veggies (potatoes, carrots, Brussels sprouts, I forget what else is in there) that I'll add to the crockpot when we leave for tae kwon do, so it will all be nice and hot (and tender!) when we get home. Easiest dinner ever.

Yes for wedding details lucyg !! And meatloaf does sound good today as it's colder and not sunny at all. But it's our 35th wedding anniversary and we always go out to eat Mexican food on our big day to repeat what we had at our reception long ago. How the years have flown by!! Good times, less than good times, mostly we forged on anyway. And food was a huge part of all of it. So, a new taco place opened up a few weeks ago. It has good reviews and good tequila. So be it. Thanks for the thread.

I have chicken and ground beef in the fridge. Chicken is too much like turkey, so I'm leaning to making a tomato/spinach/meat sauce over linguine for dinner. I also have a spaghetti squash that needs to be cooked, so will toss that in with the linquine. Glad the wedding went well lucyg! Happy Anniversary desertgirl!

Monday night dinner at the in loves house tonight. Some can't make it so it's only going to be 9 (5 adults and 4 kids) total. Meatball subs, tater tots, green salad and ice cream for dessert.

Glad the wedding day went well, lucyg. I'm still trying to figure out *how the caterer 1. Bought 120 lbs. of meat for 100 people and 2. Did not know how to cook brisket. It's obvious the caterer was not a pea. We all would have happily provided suggestions. And happy anniversary, desertgirl. I would ask where you are going to eat because you are in my neck of the woods. And Mexican food. But I think you are on the east side, and that's a trek. I think I am just taking the kids to Sam's to get pizza. I ate turkey leftovers for lunch. I won't be hungry at all. Lisa
