Today is going to be super duper busy. I'm going to be running around a lot. That means that it's taco Tuesday, because I can prepare them easily when I get home. Last night I purchased an Instant Pot on sale at Amazon. I can't wait to start using it and I'm too eager to wait for Santa.

Dinner will be something easy here too. I hurt my right hand when I slipped at Kinder this morning and it is hard for me to do much. As DH is away, I have to somehow manage. I have some leftover chicken from a roast dinner on the weekend, so I think I will make some sort of pasta dish with that and the mushrooms that are crying out to be eaten.

SO ended up making green bean casserole last night since I wasn't in the mood for turkey leftovers (since I also had them for lunch) So tonight will be the turkey casserole mash up of ingredients I was planning on making yesterday.

Dh has an appointment tonight so won't be home for dinner ... Dd#2 requested tacos yesterday so that's what I'm going to make Dd#1 hates them so she is fending for herself ... she'll be pissed off

Hugs to sueg and karinms - heal and rest. Thanks for the good wishes yesterday for our anniversary. We ate well, I even had dessert (oreo churros!!), and my blood sugar was only 83 this morning. Yay! It was fun watching other patrons drink their fancy tequilas in tiny, tall glasses. We'll likely return to the restaurant soon. Today is a healing day here. Turkey stock from the bird last week will be made into soup. And I'll fashion a sourdough loaf for some fermented tastiness. No dessert today! Thanks for the thread.

The sun is shining right now, but by dinner time, we're supposed to be having thunderstorms and lots of rain. We need the rain desperately, but I could do without the threat of severe weather.
So I'm making some beef stew. Perfect for rainy evenings.

sueg, hope the hand feels better soon! karinms, hope you are feeling better soon. We ended up with subs last night, works for me! I will make meatloaf balls tonight with the normal fixings, mashed potatoes and green beans. I have some french bread, too. I was able to pick up a Christmas gift for SO last night, it's a floor jack, stands and a creeper set. Weighs approximately 3,000 lbs (give or take a few pounds ). I have no idea how I am going to get this thing out of my trunk. I was going to store it at his mom's house in the garage, but there is no way I can get it out of the trunk! Now I have to figure out what to do... But it feels good to have at least one gift purchased!

So last night I put the undercooked wedding brisket in the crockpot and brought it to fabulous Jewish-grandma tenderness, and reheated the roasted veggies, remember? Excellent dinner, in the middle of which the 7yo said, "I don't want to eat the same dinner two nights in a row." I said, "But it's so much better tonight." (Being humble and all.) He said, "I still don't want to eat the same dinner two nights in a row." I said, "Two nights is fine. I'll make something different tomorrow." He pushed his plate away and said, "I'm done." Freakin' 7yo teenager. Tonight will be something different. I don't know what. Maybe chicken soup. It's cold here, by our standards.

I have no idea what I am fixing tonight. I am swamped with work, and my sister is coming to visit tomorrow! My plate is super full - and not my dinner plate! I only have to work a 1/2 day today. Yay me!!
I am planning on whipping up a turkey soup with the leftover turkey. I need to pitch most of the other leftovers from Thanksgiving. I am really getting sick of turkey!
I really wanted to grill steaks and have a salad but currently it is -3 degrees and I don't think I am going to want to stand outside and cook!
I am also going to try and get some gifts wrapped, my room is a disaster of bags and boxes of stuff I have bought/ordered.
To karinms and sueg I hope you both feel better soon.

We just got back from traveling for Thanksgiving and I haven't gone to the grocery store yet. So we will be eating from the freezer. Probably something made from frozen chicken tenders. Maybe some potatoes and a vegetable. I should have put some bread on at noon because we don't have any of that either. I don't want to go to the grocery store either.
