Every year my SIL and I make candy for Christmas. We have a recipe for Peanut Brittle that is really good, but the other day I had some that was just AMAZING!
It was very crispy and the color was almost yellow instead of light brown. It was SOOO good, I ate the whole little bag!
I'm wondering if we need more baking soda, but I don't want it to tastes like baking soda! LOL
Do you make peanut brittle like this?
Below is our recipe for Peanut Brittle and I love it but I'm looking for the CRISPY kind ... Any ideas?
Microwave Peanut Brittle
1 cup Sugar 1/2 cup Corn Syrup 1 cup Peanuts 1/8 teaspoon Salt 1 Tablespoon Butter 1 teaspoon Vanilla 1 teaspoon Baking Soda microwave safe glass dish wooden spoon cookie sheet covered in foil or sprayed with PAM candy thermometer
Mix first 4 ingredients together in a microwave safe glass dish. Heat on high power for 4 minutes stir with wooden spoon Heat again on high power for 4 minutes then add butter and vanilla and stir again Take temperature Continue to heat on high at 1 to 2 minute intervals stirring and taking the temperature until it reaches the hard crack temp of 300 degrees F.
Stir in baking soda and quickly scrape out onto a cookie sheet to cool Break apart into pieces
Edited because the peanut brittle comes out a light brown. :-)

The brown comes with caramelization. No need to add more baking soda, just extend the cooking time. Be careful, though, sugar burns very easily, even in a microwave.

I only make caramel which I cook on top of the stove, so take this with a grain of salt. Sugar gets darker when it is cooked longer. Maybe try cooking it to a lower temp. Hard crack is between 295 and 309. Also make sure your candy thermometer is working correctly. I have overcooked my caramels because of a bad thermometer. The caramel got really dark and was hard.

Hmmmmm ... I didn't think it was because I was overcooking. I wonder if I am. Maybe I'll have to try it today to see!

Oh yum! My favorite treat especially this time of year. In fact, I'm sitting at my desk eating some awesome peanut brittle from the super market right now! It's a very light brown/yellow tint color. I've never tried making it myself because, well, I have trouble boiling water.
