I teach HS kids that are emotionally disturbed (many with mental health diagnosis also) in a team setting. Anyhow, we are doing some cross curricular fun stuff the week of the 19th. One of the classes I teach is a culinary class and we have been given the task of making gingerbread to be used to make houses that the geometry class is designing.
Any ideas for an easy dough to use?? I don't want to use graham crackers. Thanks

I don't have a recipe for you, but I make sugar cookies a lot. You will need the finished cookies to be exactly the same thickness so they can be built easily. Use quarter inch square wooden doweling on either side of the dough when rolling out - like in pottery. That way the gingerbread will cook evenly too. Sorry if you already know this, just a bakers' tip:) Good luck!

The recipe I use:
½ c. oil ⅔ c. molasses 1 egg ⅓ c. brown sugar 2¾ c. flour 1 tsp. ginger ⅛ tsp. cloves 1 tsp. cinnamon ½ tsp. salt 3 tsp. baking powder
Combine all ingredients, and press full batch into oiled half-sheet (jelly roll) pan. For houses (crisp gingerbread), bake at 350° for 20 minutes. Cut shapes immediately with a butter knife, and remove from pan to cool and harden. For softer gingerbread, bake 14 minutes.
ETA: I have my house template pieces cut out of cardstock. I just lay out the pieces and cut around them with the knife. You really have to work quickly, though, you only have about 3-4 minutes when you pull it out of the oven. There are other recipes where you cut it out before cooking, but I prefer to do it after, as the dough always seems to spread while cooking and ends up a little misshapen.
