Which type/brand of ink works best for this technique?

I've used distress, dye and VersaMark (then powder and heat emboss). I think dye inks work best.
ETA I use SU!, SSS and MFT inks. Any ink that gives a good "stamp" with a solid image would work.

ClearSnap chalk inks also work really well. For any ink, a "juicy" ink pad works the best.

That must be my problem, I have Memonto Dye Ink and it didn't seem wet enough.

Memento is a fast drying ink. If you want to stay with the Tsukineko brand, you could use Encore or Brilliance.
