I was just invited to a friend's for dinner tomorrow night and offered to bring bread and a salad. I am so not a salad person but they are so I'd like to bring a kick ass one. Anyone have a good recipe you'd be willing to share?

I have a mango slaw that is really good but may not pair well with what she is cooking. It has a bold flavor. I'll post the recipe if you want it.

My favorite salad is one I created. I use a combination of romaine and spring mix. I add red onion, carrots, celery (all chopped small) diced beets (Del Monte, I think, has them diced in a can), candied pecans, goat cheese and a honey mustard viniagrette. You don't have to use candied pecans, I've used just regular chopped pecans, but there are easy recipes to candy them yourself if you can't find them candied at the grocery store.
Honey Mustard Vinaigrette
3 T dijon or honey dijon mustard 1 c olive oil 1/2 t garlic powder 2 T honey 3 T white wine vinegar 1/4 t salt pinch of pepper
Combine all ingredients in a bowl and whisk until completely combined.

A restaurant near us called Cosi makes an awesome salad. My friend came up w/a knock off that's yummy.
Good Seasons Basil Vinaigrette dressing mix really good balsamic vinegar really good extra virgin olive oil
She puts it over whatever salad greens you happen to like and adds crumbled Gorgonzola, red grapes (halved lengthwise), pistachios, dried cranberries & chopped fresh pear.
Easy to make & very elegant to serve.
OK, off to put the ingredients on my grocery list for next week . . .

Here's the broccoli salad that my sister made for dd's reception. It was very popular and we got a lot of requests for the recipe.
2 heads of fresh broccoli cut up into bite sized pieces 1/2 red onion chopped fine 3/4 cup of raisins or dried cranberries 1/2 cup sunflower seeds or other nut Crisp cooked bacon crumbled 1 cup mayonnaise 1/2 cup sugar 2 tablespoons white vinegar Mix up mayo, sugar, and vinegar and toss together with the rest of the ingredients.
You can reduce the sugar in the recipe as much as you like. It's easy and everyone loves it.

Sweet & Sour Tomato Salad (perfect with them in season right now)
7 tomatoes 1 small onion sliced fine (I cut in half and then slice each side) 1/2 cup white sugar 1/2 cup white vinegar (I use cider if no white) 1/2 cup vegetable oil salt/pepper
Mix all ingredients but the tomatoes in a bowl (whisk works great) and then throw in the chopped tomatoes and mix together. Best at room temperature. So good with fresh native tomatoes. Depending on how sweet the tomatoes are you can definitely use less sugar (I never use the full amount). If the tomatoes are super juicy feel free to not use all the juices so it isn't too watery.
Another great recipe you can search for is the Ruby Tuesday Apple Salad. People loved it at my daughters graduation party. Sweet and sour apples along with mayo, sour cream, lemon juice, dried cranberries. Perfect mix. Calls for pecans but you don't even need them.

When I was home (in MN) last month, we had a fish fry at Dad's house. I made Panzanella and there wasn't a bit left over. It was pretty much just fresh tomatoes and bread, so it was familiar to my family, who are not the most adventurous people. Almost everyone had seconds. Gardens are just starting to produce and we had fresh peppers and onions, as well as the tomatoes. And the basil smelled so good! I really wanted to use heirloom tomatoes, but there wasn't enough. Be sure and make your own crutons and use plenty of salt for seasoning. I also used tarragon vinegar instead of the champagne vinegar and added about 1 tablespoon extra and doubled the mustard. I made everything ahead of time, but kept the vinaigrette, veggies, and crutons separate. I mixed them about 15 minutes before we served the meal. It was so good! But the guys loved them and there weren't any leftovers of those either. I think we were all hungry!

Cole Slaw would be great with fish. This cole slaw recipe is really good. My FIL hates slaw and he ate several helping of it during one of their visits with us.
The Lady's Cole Slaw (I know, Paula Deen, but I have been making this since before she ever went on tv)
Servings: 6 Prep Time: 30 min Cook Time: Difficulty: Easy
Ingredients 2 tablespoons sugar 1/4 teaspoon black pepper, coarsely ground 1/2 teaspoon Paula Deen’s Silly Salt (I use CrazyJane Salt) 1/2 cup mayonnaise 1/2 cabbage head 1/2 large carrot, chopped 1/8 cup fresh parsley, chopped 1 green onion, chopped 1/2 bell pepper, chopped 1/4 teaspoon Lemon-Pepper Seasoning 1 tablespoon white vinegar
Directions Using a food processor, gently process the bell pepper, onion, carrot, and parsley, being careful not to over process. Cut half of the cabbage into chunks and place in the food processor and process lightly, making sure the cabbage doesn’t become mushy. Slice the remaining cabbage thinly. Mix the cabbage together with the processed vegetables. In a separate bowl, mix the remaining ingredients together and allow to stand for a few minutes. Combine the mayonnaise mixture with the vegetables and toss. Chill for 1 hour.
Summer Corn Salad Prep Time: 25 Minutes Cook Time: 20 Minutes Ready In: 45 Minutes Servings: 4 "This fresh and flavorful salad features buttery yellow corn tossed with chunks of tomato and onion with a fresh basil vinaigrette." INGREDIENTS: 6 ears corn, husked and cleaned 3 large tomatoes, diced 1 large onion, diced 1/4 cup chopped fresh basil 1/4 cup olive oil 2 tablespoons white vinegar salt and pepper to taste DIRECTIONS: 1. Bring a large pot of lightly salted water to a boil. Cook corn in boiling water for 7 to 10 minutes, or until desired tenderness. Drain, cool, and cut kernels off the cob with a sharp knife. 2. In a large bowl, toss together the corn, tomatoes, onion, basil, oil, vinegar, salt and pepper. Chill until serving.

Our local catfish place offers this and it is quite popular there. I always get it as my salad with my fish.
