DH is baking chicken breasts (bone in, with skin) that he marinates in ranch salad dressing and then coats in Shake N Bake. He said he got the recipe/idea on the Shake N Bake box. I love it...moist and tasty every time. We're having rice and leftover grilled zucchini and leftover corn on the cob with it. Wow, do they still make Shake N Bake? I used to use that when I was first married and I always loved it. I thought that I stopped using it because they stopped making it. Now I have to go try to find some.

lucygI haven't tried that brand before, but it should be okay. Plop a mound on your plate, put black beans on top-kind of big heaping spoonful (proportionate to the rice mound) and the sprinkle with onions and cheese to your taste. You can use regular onions, spring onions...whatever.

Oh and I haven't had pigs in a blanket in FOREVER. I was probably 12 or 13 the last time I had them. I think the next cold day we have, I'm going to make them. My dh and kids have never had them. How do you make yours? akathyMy great grandmother, grandmother and mother all made them so I grew up eating them. Of course they all just mixed them up without a recipe. Years ago I watched my mom make them and measured and wrote down everything she put in them so now I just follow that recipe. If you'd like me to post it I can when I get home tonight. I'd really appreciate that!! Looks like we're going to have lots of cool weather the next week so I'll be able to make them!

I had Spicy Lemongrass Pho. I took the little girl who lives above me so her mom could attend a community meeting. She is the funniest kid you will ever meet. Insightful too.

I took my 13 year old son back to school shopping today. At the mall. I hate the mall. After working up an appetite arguing about every piece of clothing in every store, we visited the food court. All that to say that I was tired and cranky, and not very hungry or inspired at dinner. So I had my famous cop out dinner- breakfast. I made eggs, hash browns, sausage, toast, and watermelon. Fed the masses without too much fuss and sat on the couch the rest of the night

Chicken filets wrapped in bacon, and fried with apples. Served with pasta and a green salad. Bacon and apples are so tasty together! Is there a recipe for that? Sounds yummy!! BBQ chicken pizza here. Not even homemade. California Kitchen frozen. Just wrap them, fry them in a skillet until the bacon has gotten a nice color. Slice apples, put them in the skillet and then the skillet goes into the oven for approx. 30-45 minutes (if you use a cast iron skillet, it can go into the oven. Less cleaning up to do afterwards). Bacon and apples taste good with pork chops, too.

Yes-but not a stupid question because I forget to mention this- the longer you simmer them, the softer they get. So If you like firmer beans, then you only have to cook them to simmer for a few minutes. If you like them softer, then you will need to simmer longer.

tiffanytwisted and brandy327Sorry it took me until tonight to get back here and post the recipe: Pigs in the Blanket 1 pound ground beef 1 cup regular rice, uncooked 2 tablespoons diced onion 1 teaspoon salt 1/2 teaspoon pepper 1 head cabbage 4 cups tomato juice 1/2 cup ketchup 4 tablespoons Worcestershire sauce * Cut core out of cabbage and steam in covered Dutch oven until leaves are soft and easy to handle. Mix tomato juice with ketchup and Worcestershire sauce. In separate bowl mix about a cup of sauce with ground beef, rice, onion, salt and pepper. Take about 1/2 cup of meat mixture and wrap with cabbage leaf. Place in casserole dish seam side down, repeating until all meat mixture is used. Lay extra cabbage leaves over top of rolls and pour remaining sauce over. Cover and bake at 300 degrees for 3-4 hours. Check periodically and if the pigs appear to be dry, add additional tomato juice.

I'm lost. To me, pigs in a blanket always meant sausage wrapped in pancakes. Never had anything to do with cabbage. The recipe sounds delicious though, I need to try it!
We had famous butter chicken(aka artery clogger )and alfredo broccoli noodles. Surely, not the healthiest dinner.

We called them both pigs in a blanket (until I got older and found that hot dogs wrapped in crescent rolls were also called this) & stuffed cabbage.
