I had my carpeting cleaned this morning so Stella and I are spending the day with my grandsons at my DD's house. I told her I'd make dinner for all of us. She requested cabbage rolls (better known as pigs in the blanket in my neck of the woods), biscuits with honey and vanilla pudding with whipped cream. I'm getting ready to get off the couch and head into the kitchen now. What's on your menu tonight?

Since I've been up at the buttcrack of dawn with the puppy AND it was rainy and cold today, I made some fresh egg noodles. I'm going to be making chicken & noodles. I can't wait. I usually make beef & noodles but the chicken version is healthier. I need to get my chicken cooking soon but I won't cook the noodles until I know what time DH will be home. He loves homemade noodles so I want him to be able to eat them straight from the stove.

Chicken filets wrapped in bacon, and fried with apples. Served with pasta and a green salad. Bacon and apples are so tasty together!

Salmon and green beans for me, leftover spaghetti for DH. I swear that man could eat spaghetti every day and never tire of it.

Feels like fall here today! Windy, dreary and in the low 60s. I love it and have a big pot of chicken noodle soup simmering on the stove!

Pork chops - not sure how I am cooking them. Pasta - probably with garlic and butter. Spinach Salad with homemade ranch.

Edit: I mixed dried cranberries, orange marmalade, minced garlic, a little water and a little OJ. Flash-fried the chops. Then poured the mixture on and turned the heat down low. They look sooo amazing.

DH is baking chicken breasts (bone in, with skin) that he marinates in ranch salad dressing and then coats in Shake N Bake. He said he got the recipe/idea on the Shake N Bake box. I love it...moist and tasty every time. We're having rice and leftover grilled zucchini and leftover corn on the cob with it.

My grandmother made them, too. And we called them pigs in a blanket or stuffed cabbage. Either way, they were yummy. I don't know if either of my aunts got the *recipe* (no formal recipe in our family, either), but my mom didn't, so I haven't had them in years & years. Please post yours - maybe I'll be lucky & it will be similar. Tonite I'm making Knorr's Goulash. Serving it over homestyle noodles (not homemade, like brandy's making, though!) and doubling it so there will be leftovers for my husband this weekend.

Green chicken enchiladas, New Mexican rice, refried beans, and green salad. All homemade by me! (ETA I mention that because I've been so lazy lately, with fast food and packaged stuff and frozen. Today I cooked!) There's watermelon and frozen fruit bars if anyone wants dessert. It's still hot here. anxiousmom: I bought yellow rice mix yesterday ... Zatarain's New Orleans Style Yellow Rice. It was the only kind of yellow rice mix at our Safeway. Did I get the right thing? If yes, then I top it with black beans, chopped onion, and cheddar cheese, right?
