Last night we did Chinese takeout. So, I'm going to do a leftover night tonight. We have pasta, stew and Chinese food. The cats will enjoy a meal of Friskies and the foo foo dry food that we buy at our local pet store.
What's on your menu?
Have a great Friday and a delightful weekend everyone.

Every once and awhile my Catholic upbringing kicks in and fish on Friday comes to mind. I think we'll do some kind of salmon, tater tots, and peas. Maybe a green salad too.

Still cold, more rain on the way and the local hills and mountains look soooooo pretty with the fresh snow.
Tonight dd requested pasta, so pasta it is! Warm, quick, and easy.

We're having a family favorite: Italian Chicken, Green Beans, and Potatoes. They like it because it's good. I like it because it's easy. I have some fresh berries and asiago rolls to go with it. I really should make salads too, but I really dislike making them. If I serve one big salad, there's always some leftover that ends up getting wasted, so I have to make individual ones. (I've made individual salads then dumped them all in a large bowl and they still waste some. ) If I don't make salads, I'll roast some broccoli, cauliflower, and carrots instead.

Yesterday was my bff's 40th birthday ... she's about ten years younger than me with no kids but we get along so well I gave her a really nice necklace and a bottle of wine ... that's how we roll Her fiance and I set up a dinner tonight for a pretty large group of her friends at a great restaurant ... a good friend and I will also bring flowers ... flowers are always good So dh and I are going to this dinner which means I need to pick up something for the dd's ... Subway or pizza ... we'll see

Today was another "throw everything in a pot and hope for the best" dinner. The kids complained about too much onion, so at leastDH will like it.

Last night we had meatloaf, mashed potatoes, and home-canned green beans over at our friends'. Such a good comfort-food meal topped off by apple pie and ice cream for dessert. So, who's going to cook for me tonight? Since it's Friday night, I'll let you all off the hook and order some pizza! Big shocker, I know!

I guess leftovers. There's spaghetti, Italian beef, Costco chicken, mixed veggies, and eggnog custard. On another note, my son is making noise about Costco chicken not being good for you, and maybe I should be cooking my own. So I may be cooking organic chicken soon, involving more trouble and money than my beloved Costco chickens. Not that he's the boss of me or anything, but unfortunately, he's probably right.

Trixie Bender - we had a similar issue with salads, ending up tossing stuff that went bad before we could finish it. Now we use the packaged salad mix. We like the spring greens mix and will add carrot, onion, etc. as we like. We use just what we'll eat for each meal and seal the package with the Foodsaver, which helps it last longer. We rarely have to toss any. It's been working well for us - we get our leafy greens and aren't wasting anywhere near as much as we used to.

Dr. Oz actually mentioned them on his show awhile back and said that it was one of the healthiest premade foods you can buy.
On the dinner front...my dh friend is coming into town for the weekend so he mentioned to me that we will be going out tonight!! Yay, no cooking!!!!!

Yeah, I'd demand he produce his sources, lucyg. We'll finish up the taco, refried beans and spanish rice. I'm hoping Saturday will be a night out!

Friday in our house is fend for yourself night.
DH is having pea soup. DS is having pizza and DD and I are having eggs and toast.
Everyone makes their own and cleans their own. Works great.

Denouncing Costco chicken is virtually blasphemy on this thread lucyg! We couldn't live without it. I've made dinner exactly one night this week; tonight will be twice. I need to get my butt in gear and put a pot roast in the IP. This is probably the longest and most stressful week of school I've had this year. I cannot tell you how happy I am to be home.

Well since last nights pot roast in the IP was so successful that they ate it all and we have maybe 1 serving left, we will probably be eating out tonight
