It's Friday so I think we will have a leftovers/clean out the fridge night. Hopefully there will be enough in there for a meal. Happy Weekend everybody!

DSO and DS got home late last night from their 2.5 week camping trip so I thought I would cook one of DSO's favorites, pork belly. But then he told me that he had pork belly at the pub last night. So now I'm not sure. There's a fair chance we will have fish and chips because that's the one takeaway they didn't get on their trip away.

My dgd is here for her monthly weekend visit. I'm trying to decide between seafood restaurant or italian. Tomorrow, I'm making her favorite meal: rotisserie chicken with....more rotisserie chicken. Followed by a chaser of...rotiserie chicken. The girl loves rotisserie chicken. LOL.

My Dad's here for a visit, and I've been simmering his favorite on the stove for a few hours: my Mom's beef stroganoff. We'll have it with rice and steamed broccoli. And, another of Dad's and hubby's and my favorites----dutch apple pie warm with vanilla ice cream.

Trixie Bender - we had a similar issue with salads, ending up tossing stuff that went bad before we could finish it. Now we use the packaged salad mix. We like the spring greens mix and will add carrot, onion, etc. as we like. We use just what we'll eat for each meal and seal the package with the Foodsaver, which helps it last longer. We rarely have to toss any. It's been working well for us - we get our leafy greens and aren't wasting anywhere near as much as we used to. Thank you for the foodsaver tip. My salads always go bad and this is a great idea.

Denouncing Costco chicken is virtually blasphemy on this thread lucyg ! We couldn't live without it. I've made dinner exactly one night this week; tonight will be twice. I need to get my butt in gear and put a pot roast in the IP. This is probably the longest and most stressful week of school I've had this year. I cannot tell you how happy I am to be home. I wish you a relaxing and stress free weekend. Do things that make you feel good.
