This is delicious and even my kids like it. I make it with butternut squash and chicken. My only notes are that it is worth it to get the natural peanut butter instead of using the jarred kind. Our HEB has the machine that grinds the peanuts for you right there in the store and extrudes it into a plastic container for which you pay by the ounce. The peanut butter keeps in the fridge for quite a long time.
I've also made it with sweet potato and IMO, it's better with the sweet potato but it's more points for me to eat it that way since I still follow WW points guidelines. It's not bad with squash, just not as silky and comfort-foodish as it is with the potato.
