I do a chicken caesar salad. I use only the caesar dressing recipe from this recipe only, scaling according to size. Then I buy store bought croutons, the flaked parmesan cheese and bagged lettuce. I do an easy grilled chicken in a skillet with my own seasoning and slice the chicken against the grain. I keep them all separate until I'm ready to serve, then I just toss the lettuce and dressing and let folks add their own chicken, parm and croutons. It always goes over very well.

Greek salad is my go-to for a big group. The cucumber, peppers, tomatoes, onion and olives can all be tossed together in advance or sometimes I will fill zip-lock bags with the cut vegetables and toss them together just before serving serving. Add oil, vinegar and oregano and serve with the feta on the side. If you make ahead and add the feta, you will end up with a soupy, tired looking mess.
Pasta salads are also great to make ahead as the flavors really get a chance to mix together.
My favorite new salad from last summer is Cauliflower & Corn. Chopped a head of cauliflower into florets, 2-3 ears grilled corn (removed from cob), one diced red pepper, finely slivered or diced red onion and toss with dijon mustard, dill and mayo. This salad holds up well to eat over a couple of days.

Ok, here it is: 2-3 cucumbers (or more depending on who you are feeding) cut into quarters 1 red onion diced small 1-2 cups of grape or cherry tomatoes (depending on how big you want the salad) Dressing: 1\3 cup extra virgin olive oil 2 Tbsp white wine vinegar 2 tsp dried oregano 1/2 tsp cracked black pepper 1/2 tsp salt Feta cheese crumbled Mix veggies with dressing and top with feta ... you can make more dressing if needed but you can't take it away so I go on the short side

Chopped BLT Salad.. and it makes a ton... I use proscuttio instead of bacon because that is what i had the first time I made it. And it was so good. www.howsweeteats.com/2013/05/blt-chopped-salad-with-corn-feta-avocado/It says serves 2.. when I make it for dinner we eat on it for at least 2-3 meals. blt chopped salad with corn, feta + avocado yield: serves 2 total time: 25 minutes ingredients: 2 cups butter lettuce, chopped 2 cups fresh arugula, chopped 1 pint grape tomatos, quartered 4 slices thick-cut bacon, fried and crumbled 1 cup sweet corn 1 avocado, chopped 4 ounces feta, crumbled Dressing I mix together and then dress the salad when I am ready to eat. I usually use about half. Sometimes I add a squeeze of honey. 1 1/2 tablespoons olive oil 1 lime, juiced 1/4 teaspoon salt 1/4 teaspoon pepper directions: As a note, to chop my lettuce I like to lay it out on a big cutting board and just continuously run my knife through it (in all different directions) until it's chopped as much as I like. In a large bowl, combine lettuce, arugula, tomatoes, corn and avocado. Add in salt, pepper, olive oil and lime juice then toss well to coat. Fold in bacon and feta then divide evenly amount 2 plates. Serve!
