What's For Dinner?

I spent the better part of the afternoon shucking, blanching, cutting the kernels off and vacuum packing 3 dozen ears of corn for my freezer. I got 12 two cup packages There were so many pretty fresh veggies at the farm stand yesterday and it's rainy and dreary so I'm going to roast baby potatoes, carrots, onions, brussels sprouts, chunks of corn on the cob and smoked sausage from a local butcher all drizzled with olive oil and seasoned up. I'm going to stir in a bunch of shrimp I have marinating in garlic and hot sauce just before it's done and call the whole mess dinner. Some crusty bread would be good with it but I'm not going to pick any up. DD and my grandsons are coming to help eat it What's on your menu tonight?

I was on a cooking tear this week, and we have 4 options for leftovers, so my husband, son & I will each be having whichever one looks good to us: Chicken Tacolados, Skillet Beef Scramble, goulash or pasta w/Creamy Pesto Sauce.

dh & boys had 5 Guys for lunch = no cooking for me tonight. They'll probably have mac & cheese (yes, out of a box - such a crime) and I'll have a bowl of cereal

No idea. I announced 2 days ago that I am officially on a dinner making strike until school starts. I am tired of hearing the complaints of what we are having, when we are eating and what.....NO dessert! I'm done! Will see the kitchen on September 2nd! For now, the family is perfectly capable of fending for themselves!

My mom is coming over for the day and we are planning on hanging out and going out to eat. Now, ice cream?? Oh yeah, I will be all over that.

I bought some cherry stone clams. Going to steam them in white wine, butter, garlic, lemon and chicken stock and cook up some gluten free pasta and have pasta with clam sauce.

Our plan was grilled sirloin steaks, steak fries, and a garden salad. It's what I really WANT. We got invited to my oldest step-son's for hamburgers and hotdogs. And birthday cake. Cake makes it worthwhile I hate to sound ungrateful or nasty but I'm not fond of our DIL. Youngest step-son put it well this morning when he said "she's as much fun as dried out Play Doh."

I took out a pound of hamburger. If I actually get around to cooking it, I might make Joe's Special. Not sure the 5yo would be willing to eat it. But I have fresh mushrooms and spinach and everything else I need for it, and it sounds good.

I just started a thread -- missed that there already was one! Making Jamie Oliver's chicken baked in milk, sautéed green beans and this The chicken and scalloped potatoes are both 1st time recipes. I'll let you know in about an hour how they turn out!! Genny

I cooked a bunch of random things today. A zucchini casserole made with bisquick, a pasta salad with roasted vegetables and some chips and salsa...lol. I am making jalapeno popper bread to get rid of some of my peppers, I hope it's not another pinterest fail!

My husband is at his firehouse for 24 hours and my oldest DD is at a party, so I just made something quick for me and the other two kids. Two kinds of pasta (rigatoni & a tomato penne) tossed with Trader Joe's organic vodka sauce, cubed chicken and breadcrumbs. Very tasty and took me ten minutes to make.

Joe's Special: I guess it's a San Francisco thing. I went looking for recipes and found a bunch, but none of them are exactly how I make it. Basically, you want to brown some ground beef with onion and garlic, add fresh sliced mushrooms and cook them down a bit, add spinach (fresh is best but you can use frozen), then scramble it all together with enough eggs to make a nice scramble. The recipes I looked at all called for herbs/spices I've never used in this dish, but whatever. I'm sure they taste good. We top with Parmesan or other cheese and I didn't see anyone else call for that, either. And Mary, yes, of course I have some broccoli in my fridge.

Cupcakes. DH did a photo shoot for a local cupcake shop and she always sends him home with some fancy cupcakes. I had half of a turtle cupcake, half of a graham cracker delight and a bite of a Hawaiian. While it sounds like an awesome dinner, I'm not used to all the sugar I've had today and have a nasty headache. Trying to kill it with coffee. LOL
