I'm looking for some new ideas of easy family dinner night meals, that are quick to make after work (possibly can be put together in the morning before work)
I'll share one:
Easy Chicken Pot Pie:
Pie crust (either refrigerated or frozen is fine)I like the frozen ones better, and will just thaw for 20 minutes or so) Cooked, cubed chicken breast (about 1-2 cups) 2 cans cream of potato soup 1-2 cups veggies (either canned or frozen work) I like to use a mix of corn and green beans 1/2 cup skim milk salt/pepper to taste Cook at 350 until crust is fully cooked on top.
My mom always added thyme in hers, but I hate thyme, so I leave it out. If you like it, feel free to add.
I like it because it does have veggies in it, it's all one dish, and I can cook up a bunch of chicken before hand, so it's quick to make.

Does your family like sandwiches? 'Cause if they do, this one is really great
2 cups shredded cooked chicken 4 bacon slices, cooked and chopped (you can sub a package of real bacon pieces if you want) 1/3 cup ranch dressing - more or less to your family's tastes sliced or shredded provolone cheese, but you could use mozzarella 4-6 sub rolls or crusty sandwich rolls
Mix the chicken, bacon and ranch dressing together in a bowl. Stuff the sub rolls with the chicken mixture. Lay a slice of cheese over the top and pop into the oven to melt the cheese. Yummy!

Have you tried the Korean Beef in the recipe section? It's a pinterest recipe that my family enjoys. It's super quick, less than 30 minutes to prepare. I add pea pods & bean sprouts towards the end of cooking. Cook some rice and dinner is served!

This is one I throw together regularly...because it is so simple and everyone in my family will eat it. In a crockpot, combine one can of Campbell's French Onion soup, one can of Campbell's Golden Mushroom soup (has to be golden, not cream of...) and one pound of stew beef. Cook on low all day. Serve over egg noodles or mashed potatoes. Now that my boys are older, I double the recipe and it works out just fine.

I make this a lot. It can be changed up to whatever you have in your pantry. Add a can of mushrooms, corn, or olives. Use spaghetti sauce instead of tomato sauce and use oregano instead of cumin. And it's even better the next day. It was originally from one of the Pillsbury cookbooks from the supermarket checkout line.
MEAT PIE 1 1/4 lb. ground beef or turkey 1/2 onion diced (about 1/2 c.) 1/3 c. diced bell pepper (any color) 1 clove minced garlic 1 small can tomato sauce 1 small can french style green beans, drained 1/2 tsp. cumin 2 c. cheddar, shredded 1 egg, slightly beaten 1 pkg. Pillsbury refrigerated crescent rolls Paprika
Preheat oven to 375 degrees. In a large skillet brown ground beef, onion, garlic, and bell pepper. Drain fat. Stir in tomato sauce, green beans, and cumin. Simmer while you prepare crust. Press the uncooked crescent rolls in an ungreased 9 inch pie pan over bottom and up the sides to form a crust.
Combine the egg and half of the cheese. Spread over the crust. Spoon hot mixture into the crust. Sprinkle with the remaining cheese and paprika. Bake for 30-35 minutes. Let stand 5 minutes before cutting into wedges. Serves 5-6.

The above recipe is a favorite of ours. Another meal we like is super simple---Kielbasa or smoked sausage (I actually like the Butterball Turkey varieties), baked potatoes, and roasted broccoli.

Burning Feathers crockpot Italian beef is out of this world!
I made quesadilla's and paninis on easy nights and change them up. My family feels like they had a great meal and I usually use up what we have one hand so it makes it not get boring. I am huge about about using what we have. I am so grateful my dh feels the same way.
Baked potato soup and I made a double batch. It last for days.
Picking up a chicken at Costco that is already baked.

Thai curry - can of coconut milk, couple of tablespoons jarred curry paste, a little brown sugar if you want it, a pound of diced chicken breast and a package of pre-cut broccoli florets. Sautee the chicken and broccoli in a little oil until almost cooked, add the other ingredients and stir, bring to simmer and cook until chicken and broccoli are done. Serve over rice - and make extra rice.
Later that week make quick red beans and rice: slice a package of smoked sausage and sautee it in a little oil with a handful of pre-cut onion/celery/pepper mixture. Stir in a can of red beans and several dashes of Tony Chachere's seasoning. Simmer to let the flavors blend and serve over the leftover rice.

DD has asked for Bagels and Lox for every meal this week. lol
It is an easy, easy meal - smoked salmon cut very thin (probably not technically lox, but close enough for us), a bagel, and cream cheese. We add capers, and many people add onions or tomatoes.

My favorites lately: trader joes pizza crust and whatever is left in the fridge for toppings. Sunday we had blue cheese, mushrooms, peppers, onion, chicken sausage links, and cheddar cheese. But I've used leftover steak and BBQ sauce, chicken and homemade ranch dressing, pesto and sliced tomatoes with spinach.
Chile Verde: I use Two Peas In A Pod's crockpot recipe that I've tweaked. But the first time we eat as chili with rice and cornbread. Then I freeze portions and we use it for nachos with jack cheese or as a topping for scrambled eggs with toast.
Meatballs: I make 3 lbs of basic meatballs and divide into 3 different bowls. In one is Italian spices and parm cheese to add to spaghetti. One is buffalo sauce and cheddar cheese to serve with homemade oven fries. The third is usually Asian with soy garlic and Siracha to serve over rice. I freeze them individually after baking for 10 minutes at 400, so I can pull out what I want, finish baking for 15-20 minutes while the side is cooking.

And here is another easy meal, which has the added benefit of being low cal - only 283 calories per serve: Sticky Chicken. Sorry the measurements are in metric.

White Turkey Chili
1 lb ground turkey, browned and drained 2 cans northern beans, rinsed and drained 1 jar of salsa 1 can of corn 8 oz pepper jack cheese
Mix together. Stir. Allow cheese to melt. I use organic salsa, beans, and corn. You can use mild, medium, or hot cheese and/or salsa. We use mild because my daughters don't like it to spicy, and we eat it with tortilla chips.

I make tacos. I just cook some ground turkey and chopped onions. I throw in some taco seasoning, chop some lettuce, open a can of salsa, open a bag of cheese, put out a container of sour cream, and fill the taco shells with the meat. I'll usually open a can of whole beans and we are good to go.
I also go to Trader Joe's and buy some of their frozen foods. Tonight was spicy broccoli and beef. While it was cooking, I make rice. I also buy their frozen tilapia, I bake the fish, then put it in corn tortillas, top with pico de gallo salsa and sour cream. I have little packets of seasoning for rice, so I'll make either Mexican rice, or beans to go with those.
I also take red potatoes, onion, bell pepper, and garlic. I cut them up, coat with olive oil, and season with salt and pepper. I cook it for about an hour, and then I take kilbasa, slice it up, and bake for about 30 minutes, or so. This one, you have to leave in the oven. It's not a meal you can whip up and eat right away.

My favorite quick dinner is fresh cheese torellini with whatever sauce I have in the fridge (tomato, pesto, alfredo) or just tossed with olive oil & parmesan cheese. I always have a pack in the freezer - fresh is cooked in 4-5 minutes, frozen 6-8 minutes. While the water is boiling, I cut raw veggies or make a salad.

I don't worry to much about what it looks like. I cut it just like a pie, but yes the ingredients can spill out. I don't know how to prevent that.

Great ideas so far! One very quick meal my kids both love (always a challenge in my house) is baked ravioli. All you need is a bag of frozen ravioli, 1 26oz jar of marinara, 2 cups of shredded mozzarella and parm for sprinkling.
Heat oven to 400 f. Spray bottom of 9x13 rectangular baking dish with cooking spray.
Spread 3/4 cup pasta sauce on bottom of pan. Arrange half the bag frozen ravioli in single layer in pan then top with half the remaining pasta sauce and half the shredded cheese. Spread the remaining half bag ravioli in a single layer then top with remaining pasta sauce and shredded cheese. Sprinkle on parm then cover with foil.
Bake at 400 for 30 minutes, then uncover and bake for 10 more or until hot and bubbly.
We love this and I have made it in the morning and then thrown it in the oven closer to dinner time many times.
