Tonight I think I'm making either Tuscan bean stew per a ds request or meatballs and pasta. I'll see where the day takes me and decide in a while. Meanwhile I'm watching the cats stalk eachother. They're having Chez Friskie in case anyone was wondering. Dinner planning for the house pets is much easier than planning for the humans. The turtle never complains. He just nibbles at whatever we leave for him. Cats will eat anything that doesn't eat them first! What's on your menu? Have a great Thursday.

So dd#1 texts dh at 5:30am ... just to tell him that she misses us but it having a great time in Spain I can't wait to hear all about it ... she comes back on Saturday evening ... We're taking fresh ravioli with a red sauce to MIL's place tonight ... dh is one of four kids and MIL has decided that he is her fav because we bring dinner to her every week

Then your cats are far less picky than the one residing at my mom's house! He knows what he likes and how he can have his human slave fullfill his wants and needs.
And speaking of picky: we had fiskegrateng (which DS doesn't like) and DD was so happy she almost cried. It's her favourite meal (I honestly think that given the choice between fiskegrateng and chocolate, she would choose the fish). Invited my mom over for dinner, and DD will have leftovers for her evening meal, breakfast and possibly dinner tomorrow.

We're having chicken baked along side green beans and potatoes on one pan. I've seen the idea floating around Pinterest and finally decided to try it.
I will be replacing some of the potatoes with radishes. Did you guys know that when you cook radishes they lose their spicy kick? Yep, very similar to potatoes in texture and taste. You can roast them, fry them, boil them, whatever you do to potatoes. They're low in carbs, which is why I'm using them tonight.

Some spaghetti recipe that I found in a Cook's Illustrated magazine (or Cook's Country - same thing). It has Italian sausage, red bell peppers, and onion in it, so DH will love it. I am not a big spaghetti fan (I know, I know), so I will eat it, but I probably won't love it. On another note, why didn't anyone tell me that frozen diced onions were a thing?? They are so easy and convenient for cooked applications. I love them!

Tonight will be dinner at my parent's, as we visit with an aunt and uncle from out of town. I love my mom to bits, but cooking is not her strength. In fact none of the women on that side of the family excel in the culinary arts. Yes, I include myself in that group. Not to worry, the company will be great and that's what matters most.

No idea about dinner, and I'm going out for lunch with my mom and brother, so I won't be particularly hungry at dinner time. I guess I will feed the boys leftovers. There are plenty of those. leannec, my idiot son texted me at 3:00 am when he got up to take DIL to the airport. I just keep reminding myself how cute and sweet he was as a baby. @nicksmom, I had no idea about the radishes. Will have to try that out. I have radish issues that I blame on my mom but that sounds like a worthwhile way to eat them.

My sweet dh is cooking a ham that is probably large enough for the entire dinner tribe to share...and have leftovers as well. Why?? I just don't know what compels him some days! There will be asparagus and possibly carrots as well. After 8+ weeks he still doesn't remember I'm not eating rice or potatoes on a regular basis. He's lucky I love him!!😍

I am sitting here running through the choices I have on hand and not really coming up with anything, again. I am thinking maybe shrimp and brown rice or shrimp and some grain. I don't have any fresh vegetables left except for carrots so the veggie will be carrots. @nicksmom thank you for that tip about radishes. I never would have thought to cook them....now I will need to try this. cadoodlebug congrats on the appraisal coming in at full sale price, that is really good.....which I am sure you knew, but I just needed to type it out, I guess.....

It's the strangest thing. Several of us found ourselves craving turkey with stuffing and gravy when it was menu making time. I never make "holiday" food outside of the holidays as I feel that's part of what makes them special. But the cravings... they were/are powerful. So I've picked up the tiniest turkey breast imaginable and will be making the most fuss-free (as little from scratch as possible) turkey dinner sans dessert or time consuming special side dishes. I'm not even expecting leftovers! Those would be nice though as tomorrow I won't have time for much cooking at all. Or online time... so Happy Weekend a little early ladies.

We had spaghetti with homemade veggie filled marinara sauce last night. It had kale, spinach, red bell pepper and carrots. I kinda made enough to feed the entire cul de sac of neighbors we have hahaha so we are having leftovers!

DH had his warmed over soup and toast - it was a good day for it because we have had rain all day long. I had leftover sloppy joes.
That is good to know about the radishes. I'm one of those people that can eat them raw or on my salad.

Fried up some meatballs, a piece of pepperoni, 1 sausage link & 1 chicken drumstick. They are all snuggling up in a big pot of tomato sauce. In about an hour & a half, it will be served over spaghetti w/a loaf of Italian bread & lui lui dipping oil that my husband brings home when he works in NH. Can't wait!
