I have scallops for dinner and wondering if anyone has an amazing recipe to recommend? Last time around I baked with a breadcrumb recipe, which was ok. Looking to try something new...

My amazing recipe... go to the nicest seafood restaurant in town, order the scallops, savor every bite. 😄
Eta. Sorry I couldnt resist. I just had scallops at a fancy place a week or so ago. And they were really good.

I dredge mine lightly in a mix of flour, panko breadcrumb, pinch of cayenne, paprika, salt and pepper and fry in BUTTER...so freaking yummy!

I like them just pan fried in butter and garlic. The secret to good scallops is to not overcook them, they cook fast.

Just make sure they are very dry before you fry them. If they are full of moisture they end up boiling instead of browning. I pat them with a lot of paper towels until they are dry, then fry in garlic and butter. Same for shrimp. I like them browned over a very hot fire.
