Has anyone used GEDmatch.com and if so, do you like it? Seems like it will break down ethnicity a bit further than Ancestry, but the site is a bit overwhelming. Also, any other sites you'd recommend uploading your DNA results to?

No it doesn't break down your ancestry even further - it just allows you to upload your data to see if you have matches to people who have tested from all the different DNA companies who have also uploaded their data to GED match (ie. it won't match you with people from other sites if they haven't specifically added their data to GED match) Why are you so obsessed with a further break down? You have the information - there is nothing further to break down about race.
Uploading to other sites (for those sites who allow it) ONLY gives access to people you may match to. They also don't reanalyse your data, nor will the give you that elusive "further breakdown of race" that you want...but that doesn't exist. If you want analysis from another DNA company then you will have to do the full test again with them and pay for it. The way the present the data may look slightly different and they may break it down into different categories, but the basic information will be the same.

Because it would be nice to have a further breakdown of what something like Asia East is vs. having Russia, China, Korea, Mongolia, Myanmar, Japan, Taiwan and 9 others all lumped together. Some of the admixture graphs appear to show more specific breakdowns. Also wondering what other sites people have uploaded their data to as there are ones out there that will give you info about your genetic risks.
