It seems like a lot of rv-ers use instant pots. So, I looked on line..... There seem to be a lot! Which brand is recommended by the peas? It doesn't need to be huge... Only cooking for myself and maybe 1 or 2 guests.... Plus rvs don't have a lot of space.
While I am asking, do any of you have great recipes that would be suitable for a diabetic? Food must be able to be cut into tiny pieces ( this is for my sister who has swallowing caused by her CP)

I love my Instant Pot (the brand) & use it throughout the week! It's rare that I ever use my crockpot now. Recently a friend surprised me by gifting her NIB Intant Pot so that I could have two to use.

On Youtube, there are a lot of long haul truckers that use an Instant Pot while on the road too. There was a husband/wife team that make a lot of videos and give recipes for IP meals. I love mine and cannot imagine cooking without it anymore. The things I like to eat, like quinoa, fresh vegetables, oatmeal, soups, sweet potatoes, and hard boiled eggs are so fast and cook consistently time and time again without me having to stand there and babysit a pot on the stove. I really enjoy mine.

My husband has chewing and swallowing issues. I purchased the IP Duo 6 qt 7-in-1. Absolutely love it! I ordered it hoping that the fork tender meat would help DH expand his diet and nutrition. It has made such a difference for him and he is functioning so much better with the better nutrition. Sometimes I have to cook things longer, but that is ok. I find that NPR works much better for him than quick release. NPR seems to be where the tenderness comes from.
We use the IP constantly. We got a fancy new oven in November, and we have hardly used it because we are always using the IP.

DH and I are both diabetic. I use my not an Instapot EPC for steaming almost as much as I use it for cooking under pressure. I bought mine a while before the IP craze hit, but I bought an actual IP on Black Friday. My DD has it at college. I'd buy an actual IP brand because of all the cookbooks and support groups available for it. Sure, I can use most of the recipes as written in my EPC, but having the actual brand pot is easier.
Can your sister eat shredded meat ok? I frequently make meats that I can shred for DH and I. I pressure cook it until the meat is fork tender, then put it in my Kitchen Aid mixer. DH is on a renal diet and his protein intake is really restricted. I can mix a little shredded meat in with a lot of veggies and it seems like he's getting more, kwim?

This is also the same one I have and seriously...I use mine 3 or 4 times a week at least. It's just my SO, myself and our 2 yr old. I really can't recommend it enough and the $89.95 price right now is GREAT! I waited and waited for it to come down to $99 and finally bought it. My only regret is that I didn't buy it on Black Friday last year lol.

The Insta Pot would be great for a small space or RV because of versatility. I keep mine on the counter and use to sauté veggies, as a slow cooker and as pressure cooker.
I have the ninja ___-in-one slow cooker and barely use it now that I have the IP.

Hopefully you will love it! I follow a long-haul truck driver husband-and-wife duo on youtube; they use an Instant Pot for most of their cooking-- they also use a hot pot and some other small appliances; it's pretty cool, the things they can cook with those types of appliances. Check out elaine 's weekly instant pot recipe thread here, too. it's so nice to be able to cook something quickly and have it be flavor-packed. It's also nice that you can just saute right in the pot before you bring it up to pressure to cook whatever you're cooking, instead of having to saute / brown on the stove top if I was using my crock pot. Less dishes to wash is always good thing, lol.

The instant pot is the brand name. Made in Canada and have excellent customer service.
Not all electric pressure cookers are Instant Pots 😉😁
