Just wanted to share, Swanson came out with a great chicken broth that you can add to your rice, I love it!  I had picked this broth up intending to try it to make a quick soup for dinner, and it was sitting in my pantry. This past weekend I made chicken mole for dinner, and I needed to add chicken broth to make the sauce. I didn't have any regular broth and I had people over for dinner so in desperation I used this. It had lots of flavor already so since I had to make the rice anyway, I decided to use it for the rice too since it was already opened, and it was great!
Now, I still did add some regular seasonings I always add, but I just went lighter on them. Just a pinch of garlic, pinch of cumin, pinch of salt, and the tomato sauce. The rice came out really good! So, I thought I'd share. It might make a great time saver for you, you might not need to add anything else when you are cooking up your rice (see recipe over on the recipe board). I know a lot of you like to add chile powders and like to use broth in your rice.
Just thought I'd share!

It's never crossed my mind to add broth to rice. My kids LOVE rice. I'm going to have to try this. Thanks for the tip.

I just wanted to add that I still used the tomato sauce..if you want the orange tomato flavor Mexican rice..but I'm thinking you don't have to add it if you want something a little different.
Just still saute lightly brown the rice, add some mince garlic, a bit of onion and brown and then add the broth.
But with the tomato sauce...oh so happy dance good.

That is awesome. I always use chicken or beef broth/stock in my rice. I usually do a mix of the stock and water. The problem I have with making Mexican rice is I always put too much tomato sauce in it.
I really like the Rice a Roni fried rice. I use 3 to 2 stock to water ratio. I pre cook my chicken and cut it up and then half way through the rice cooking time I add the chicken. I do this with pork as well but I do a half and half stock to water ratio.
I do the same with the beef rice...
I am going to have to find me some of that mexican stock so that I can try it. I bet it is a lot better in the mexican rice.

Doesn't appear to be easily obtainable in England but I'm going to have a good look at the shelves when food shopping to see if there is an alternative, so I can try it with the rice!

I did adjust of course, how much salt I put in the rice, I always just taste it first and see if it needs more on stuff like this. Chicken broth is salty though, by nature..unless you buy the plain low sodium kind. This is a specialty item and I didn't see a low so version of it on the shelf. I hope it sticks around and gets popular cause I'll be bummed if it gets discontinued. They also had a Hot and Sour soup blend too. I still haven't tried that one either..but they looked fun so I bought one of each. I'm still not over Philadelphia brand getting rid of those awesome cooking cream sauces they used to carry. The lemon/garlic flavor one was great and I miss it.

I am going to have to try this I love your rice recipe. I hated the idea of not using all the tomato sauce and tossing out what I didn't use so I got these little plastic sauce containers and freeze what I need for one recipe of rice. It has worked great.
I also loved the cream cheese sauce stuff. The Santa Fe one was really good DS loved the enchilada recipe on the package. I am sure that is sacrilege to you as it was not even close to authentic anything but they were still tasted good but completely different from traditional enchiladas.

When dh's mom showed me how to cook for him 30 years ago, that was her "secret" to good rice. We did have to stop using it after his heart attack because it is loaded w/salt, but it always made great rice.

I haven't seen this product yet, but I'll look for it!! I love your rice recipe, the only thing I do differently is use a tablespoon or so of tomato paste rather than tomato sauce.

I always use broth when cooking rice, adds more flavour.
Not sure if they will have that broth in Canada. I am doing a trip across the border in a couple of weeks and will look and pick some up if I find it because everyone raves about your rice and I want to try it!

Oooh...I was going to make your rice tonight so I'll look for this at the store today. My boys don't like anything spicy and aren't big fans of mexican food, so the broth might be better than if they see me pulling out all kinds of spices! lol wimps!

Okay so I made it again last night and I liked it, but I still prefer the original recipe..  I'm just not a huge fan of overly spiced up rice (its not spicy hot, promise!) But, its always fun to have variety as everyone's tastes are different! Either way, have fun!

Oh, I miss Swanson broths. I had to give them up because of the MSG (natural flavoring and yeast extract), but they sure made it easy to cook the yummy stuff.

The salt content is high. When I make rice it's usually for a large family gathering. I can no longer eat rice, beans and tortillas myself but I still enjoy cooking for everyone else. The Pioneer Woman uses masa in her chili recipe, too. It really adds a good depth of flavor!
