So the boy is begging for mac and cheese. I am planning on making it the old fashioned way (roux, cheese, mix, bake) but I have some goat cheese floating around and am thinking of throwing it in there.
What say y'all? Will goat cheese work with basic mac and cheese (chedder cheese?) or should I save it for something else?

Goat cheese is delicious is macaroni & cheese... but what other cheeses are you mixing with it?
And does your son like goat cheese (the flavor will come through).

Yes, he loves goat cheese. Thank goodness as I love it too. I have mild cheddar and a bit of mozzarella.

If this is for a kid, I'd say stick to the basics. Don't do anything that would make it seem strange to him. my personal vote: snack on the goat cheese while making the classic mac and cheese. I should amend and say the kid is 16 and doesn't have trouble with new foods.

I don't think I'd mix it in with those cheeses. It would go better with something like Gruyere and/or fontina.

Goat cheese seems a little potent for Mac and cheese. I think of Mac and cheese as a mellow cheesy goodness comfort food. Goat cheese is more of an appetizer/cheese plate a-little-goes-a-long-way flavor. That probably makes no sense so I'll summarize--I would not use goat cheese in Mac and cheese. I like the idea of eating it as an appetizer or snack while you are cooking.

I love the tang that goat cheese or blue cheese adds to mac & cheese. I add a bit along with dry mustard when I make mac & cheese.

Thank you all for your opinions! It turned out that I couldn't make the mac and cheese after all...I went to gather up all the ingredients and discovered that I had no milk. I don't really drink it, the boy does and there was just enough for cereal this morning. So no mac and cheese. We ended up with enchiladas-sans goat cheese-instead.

Late to the cheese party, but my opinion anyway...... I love goat's cheese, but it is so expensive here that I would not waste it by putting it into mac and cheese.

I'd ditch the goat cheese and the making it from scratch and just make Kraft Mac & Cheese from the blue box and love every bite. that stuff. ETA: Please don't harass me for loving boxed M&C. LOL! I don't eat it often. DH hates it.

I make mac and cheese the way you do and i use cheddar and add another cheese in as well. Lately I have been using Havarti and it has been very yummy!
