I'm making the beef and broccoli in the pressure cooker. Broccoli cooks to mush in about 10 seconds in the pressure cooker so I planned to add it in later. After the beef mixture was cooked I turned off the pot and did an experiment with some of the broccoli -- I put it in raw and put the lid back on but didn't seal it or put it under pressure. I wanted to see if the heat of the sauce would cook it. Well, it was a too-successful experiment -- the broccoli was too soft. lol So I planned to cook the rest in the microwave and add it in after the beef and cooled off a bit, then we'd reheat our portions once dh gets home. Well that darn broccoli would NOT cook! I kept putting it back for another couple of minutes. I lost track of how many times I did that. Finally I dumped it in a pot on the stove and it's boiling away now. Honestly... I would swear I've cooked it in the microwave successfully before. Did I get mutant broccoli. Do you think broccoli is best just cooked on the stove to begin with? Well that broccoli was on the stove for a LONG time. I've just put it in the pot with the beef mixture, the sauce tastes excellent and the dinner will be a success. But sheesh. Is there a better way to cook it?

I buy the bags of broccoli at Raley's that you just pop in the microwave for 3 - 3 1/2 minutes. More expensive but pretty much fool proof.

I like to roast broccoli in the oven. I spread it out in a sheet pan with a little bit of olive oil and season salt, and roasted it 425 for about 15 minutes. Depending on what we're having it with, I might add a little parmesan cheese in the last five minutes. It's super good that way, and my 3 boys fight over who gets to finish off the pan!

In my opinion, broccoli should be cooked just barely. Hot, bright green, and just tender. Anything beyond that and it just doesn't taste good. I always cook on the stove so I can keep an eye on it.

We do a cup of water in the instant pot at zero minutes. Take the broccoli out and make the rest of the beef and broccoli recipe and add it in at the very end.

I generally steam broccoli. Once the water under the steamer basket boils it only takes 2 or 3 minutes to cook. I hate overdone broccoli!

i steam it on the stove. about an inch of water. cover. 10 minutes fromt he time you turn it on until it is done. you may like it less cooked, so you may want to check it sooner. i like it tender, not crunchy, not mushy.

If I steam it, I do so on the stovetop, and I use a steamer basket with just a little water in the pot. I watch it like a hawk until it's bright green and just tender.
With that said, I really like to roast it. I prefer to roast all vegetables with just a little olive oil, salt, and pepper. A little parmesan cheese is a nice touch on broccoli.

For beef with broccoli, I steam the broccoli in the IP for zero minutes, quick release, then I make the beef and sauce, stirring in the broccoli at he end.
I also like it roasted or raw.

If I'm serving it with a roast dinner I steam it for a couple of minutes. If I'm adding it to a stir fry or curry it goes in last, and only for a couple of minutes. If I'm making an oven baked risotto I put it in the dish with the lid on after I take it out of the oven for about 5 minutes. I prefer broccolini to broccoli, and I usually oven bake it.

You have to cover it when it is in the microwave.
Honestly I only like the stems. I choke on the florets.

I cut into small pieces, put in bowl, put a little water in bottom and microwave 3-4 minutes.
I don't think I would make that dish in anything but a wok or fry pan.

Yea, we do the broccoli in the oven 425, 15 mins. I put the florets in a plastic bag, pour in olive oil, salt, paper, sesame seeds, and shake up. Cook on flat sheet pan. Take out and grate fresh parm over the top. Yummy.

Roast it in the oven. Otherwise, just steam it for a short short time. Broccoli goes from zero to mush in a nanosecond.

This is what we do too. I sometimes throw some balsamic vinegar on it with the olive oil. We like it crispy in our house...way better than soft. I also serve it with lemon wedges, the lemon cuts some of the bitterness. Yum!

Roasted in the oven with some olive oil. Remove and while hot, top with shaved Parmesan and maybe some walnuts.

Roasted is fine, but a quick saute in a non stick pan is better IMHO. If I'm tossing it in pasta, put it in the colander before drain the pasta and it will be perfect. And I agree with AussieMeg, broccolini is preferred over broccoli.

I saute it in coconut oil for a few seconds, add a little chicken stock, and cover until it's tender enough.
I like it roasted, too- with Parmesan cheese.

Alternatively, with 1/4 c of water in a bowl and microwave for 4 minutes while the beef is cooking in the IP. Roasting it is great but, if you're using it in beef and broccoli, I wouldn't waste the time.

Sauté it. With garlic. You can put a splash of water and lid on it for a couple minutes if you prefer it more tender. I like it crisp tender, but definitely cooked, not raw.
I think a lot of kids don't like broccoli because it's steamed in most households.

I don't have an IP, but when I cook broccoli, I stem it in my rice cooker. We like it a little crunchier, so when I put in in the rice cooker, I usually do not let it go the whole cycle and check it a few times while steaming.

I eat it raw, steam it, or stir fry it. That's the only success I've ever had with broccoli.

I microwave it, but I it's probably more steamed. I cut it into florets (not too small, you still have to cut them in half again when you eat them). Put in a microwave safe bowl, with some water, put on the lid with a vent and microwave on medium heat for 5 minutes. Then I check it, sometimes it's still a little too hard and I may do another minute. I never microwave on full power. This way it ends up really bright green with a little firmness to it.
