I have an appointment in the big city this am. Both traffic and the subway are gonna be gnarly today. So, dinner will be take-out Chinese. I will be exhausted after I get home and the nice people down the street cook a delicious dinner for dh and the guys.

Not sure. I did end up with the sheet pan dinner with boneless, skinless chicken thighs, broccoli and potatoes. Seasoned salt and olive oil for flavoring. That was it. Turned out yummy and will be adding that into the dinner meals from now on.
So tonight may be the left overs I talked about yesterday.

I need to make some spaghetti sauce today and plan some meals that don't involve the oven as we are expecting triple digits for at least the next week. DS is coming up tomorrow for Father's Day so we'll probably go out one night. Not sure what's on tap for tonight.

We ended up getting Chicken On the Way last night ... a local takeout chicken place ... it was pretty good ... better than cooking So tonight will be the homemade chicken noodle soup and multigrain bread that I didn't make yesterday Picky #1 won't eat it so she can fend for herself

scrappert - I took out boneless, skinless chicken thighs about an hour ago and am trying to defrost them in the refrigerator. I might try a sheet pan dinner - I have broccoli and potatoes. Sounds like a plan. Just olive oil and seasoned salt? I can handle that. Hot here, too. Weird weather for the last two days, but my basil is going strong. So is my desire to clear out stuff in the craft/sewing room. What a mess. Thanks for the thread. May the appt. and transportation be smooth!

We're having Mississippi Roast and rice per dh's request. It's too hot to turn the oven one to roast vegetables, so I'll make a marinated vegetable salad instead. scrappert , sheet pan meals have become one of my favorites because they're so easy. Just use whatever meat and vegetables you have, choose your seasoning, and done. I've been making one every week, but now that it's too hot to run the oven, I'm thinking about switching to those foil-packet meals on the grill for summer. cadoodlebug , that email sounds legit to me. What makes you think it's spam?

Well, I'm glad to see that I'm not the only one with last night's plan sunk. Got home and BF in a funk, did not want to eat the leftovers, so we went to a local Mexican place. So tonight, take two on the smoked grilled pork chops, potato salad and sauteed zucchini, onions and mushrooms.

I asked dh to take chicken out to have with salad. Unfortunately he forgot there's 5 lbs of cooked tenders in the freezer... so he has the oven on to slowly roast bone in chicken breast.

Salmon is marinating as I type - tonight will be grilled salmon, tater tots, the rest of the asparagus, and maybe a salad. Darn, we're out of cantalope... guess I'll have to settle for ice cream.

I tried last night to get him to grill the chicken, but this dinner probably turned out better the way I did it. LOL Just olive oil and seasoned salt? That's it!  Easy "pea"sy.

Minor detail. scrappert, I don't grill because apparently people with two X chromosomes are incapable.  I wish I knew that back before I got married and I grilled all year around. desertgirl, I use a variety of seasonings for sheet pan meals. I've used Italian dressing packets, ranch dressing packets, or onion soup packets, Penzey's spice blends, the seasoning from this recipe, and a few more. I try to change it up so my family doesn't get tired of the same ol' thing and decide they don't like sheet pan dinners any more.

DH and I were gone on a cruise week before last and I've felt yucky since coming home. Not actually sick, but not great either. I'm thinking maybe allergies and/or the weather (hot/humid/storming), so today I decided that I needed to actually cook a meal. So, there's a roast in the crockpot and I'll make mashed cauliflower and green beans to go with it. And maybe there will be leftovers for tomorrow!

Last night we went to a little restaurant in the plaza just outside our hotel. Again, simple but lovely food. I has salmon tartare with lime and ginger, followed by a whole grilled fish Dessert was a sorbet trilogy - pear, lime and blackcurrant - which had amazing flavours.
We've been out all day touring Provence and will head out for dinner soon. Not sure if we are going to the hotel restaurant or heading into the main part of town.

Ugh, no idea. It's still hot here, but not as hot. Only 92 today, but the humidity is pretty low, so that's great. My DBF works outside doing tree removal all day, and comes home completely spent. He's so hot and tired when he comes home that he isn't even hungry because he's almost sick. He can't drink enough water during the day to even stay hydrated. And now several days of this heat is really getting to him. I got him to eat hamburgers last night, barely. He was asleep by 8:30. Tonight will maybe be takeout Chinese. Not too heavy, and won't heat the kitchen up cooking. ETA: we ended up with Chick-fil-a. He was actually hungry and had a craving,  so I picked it up when I went to the book store.

I was going to make Nachos, but DS would have had to run to the store for a number of things, and he already had some places to be, so instead, on his way home from his volunteer gig, he is going to pick up broasted chicken, potatoes and cole slaw. DH will be home early because he has a Dr appt, so they will eat it hot and I won't

I got home late last night and my kitchen was a mess. Damn teenagers. DS was asleep. So I did not cook my dinner last night. Instead I decided to hit the mall. I ended up eating at the stir fry place. It was just ok.
I'm feeling like teriyaki pork tonight.

It sounds like most of us (except the very fortunate sueg) are changing dinner plans, making do at the last moment, and trying to stay cool in the kitchen. That's true for us today as well. DH came home from work not feeling well. Like kelly8875's DBF, I think he is just over heated and under hydrated. He doesn't feel much like eating. I'll save the meatloaf I was planning for another night. We might be eating toast and cereal this evening.

We ended up staying in the hotel, as the weather was very threatening. Our tour guide today had told us that the restaurant at our hotel is considered on of the 2-3 best in Avignon, and oh boy, was he right.
It had a simple menu - 2 choices each of starter, fish, 'earth' and dessert/cheese, with the options of either a 3 or 4 course dinner. We opted for 3 courses and had zucchini flowers stuffed with cod mousse, in a fish soup, followed by braised pork cheeks with aubergine puree and celeriac. For dessert I had a chocolate confection - chocolate crisp and mousse, with cherries and chocolate leaves, served with vanilla ice cream. It even had tiny flakes of gold on it and was soooooo delicious, DH went with the cheese, and it looked good. As well as that, we had some 'amuse-bouche' to start - cucumbers infused with lemon and coriander, a pea and coconut mousse served in a coconut shell, and tiny pieces of mackerel and cheese mousse on something like chinese prawn crackers. After dessert, they brought us a plate of sweets - marshmallow that was rolled in a lemon sherbet, hazelnuts in bitter chocolate, a mini choc muffin with nut mousse and a cherry macaron. We also ordered coffee, which we needed to cut the sweetness of that. All of this was washed down with a glass of rose champagne and a bottle of local rose - which was just barely pink. This was definitely our 'don't care what it costs' inner for this trip, and worth every single euro!

I bought sushi for dinner. I am not cooking tonight.
I was supposed to make DS some miso soup for breakfast last night and didn't have any tofu. I felt so badly. He was all, "it's ok Mom. I can have something else, but I like making it for him and it fills him up for the morning. Totally my fault.

The other part of we will be eating at a picnic for the school shooting club. They get to shoot and eat, what more could anyone want.....well I would want not to go, but that is just me. So tonight for my dining pleasure I will be having some sort of food....I am thinking shrimp and salad....easy and good for a 90 degree day....

We have an engagement party tonight – UGH – no, make that DOUBLE UGH! – but at least we will (hopefully) get a good feed out of it. I have no idea whether it will be a sit down meal or finger food or what, but I am hopeful that it’s something nice.
