I'm low-carbing and IFing so I had another cauliflower crust pizza with prosciutto, sauce with garlic, broccoli, onion, mushrooms, pesto and 3 kinds of cheese.

I'm not sure where the day went. Dd picked cherries at her boyfriend's grandparent's. she made pies with them. She even made her own crust. I always buy the frozen stuff. I did work on some jewelry projects but the studio is closed for 2 weeks so I don't have access to equipment. Oh well. Anyway we ordered pizza from her favorite place.

I got some sushi for dinner. We are sick of lasagne already and wanted something different for a change. I need some more ideas for dinner that the family will eat. Has to be able to be carb modified, taste good, and something other than bbq steak, chicken or fish. They won't eat casseroles because carbs. I can make beef stroganoff but DS doesn't like it so he just gets steak. My dad says he likes everything unless well there are carbs in it and then he doesn't like it. I think maybe I am sick of cooking already. How about stirfries? Meat and veggies, and you can make rice on the side (if you want it) which they can eat or not eat, their choice. Same with anything else you like, as long as it isn't all mixed together like a casserole. Cheeseburgers ... they get theirs without a bun. Pasta with chicken, veggies, and sauce ... they can watch you eat your pasta while they eat chicken and veggies. Chili made with veggies, no beans ... you can mix beans into yours if you want them. You can cook virtually anything you like (other than casseroles) and they can skip the carb portion of the meal.

I finally made the Moroccan pumpkin soup last night, but I haven’t eaten it yet. I will have it for dinner tonight. And leading on from that I now have my very own “Would You Eat This?” question for the dinner tribe: I made the soup using the soup base pictured below instead of vegetable stock (or broth as I think you call it in the US). I picked up a couple of cartons for 50 cents each at a clearance store. It wasn’t until AFTER I’d made the soup that I noticed the “Best Before” date was August 2016. As in last year. I tasted the soup and it seems fine. It has a bit of a tang, I am going to assume that is from the ingredients and not that fact that it is rancid haha! So would you eat it? I am working on the assumption that “best before” is a suggestion and not as important as “use by”.  Ingredients are as follows: Campbell's Real Stock Vegetable (99%) (Vegetable Stock (Water, Carrot, Garlic, Celery, Cabbage, Onion, Parsley, Beetroot, Bay Leaves, Lettuce, Thyme, Watercress, Baby Spinach), Sugar, Sea Salt, Glucose), Spice Extracts (Coriander Seed, Cumin, Paprika, Black Pepper, Cinnamon, Turmeric), Lemon Oil Extract, Garlic Extract.

Everyone knows that I have Picky #1 and Picky#2 but they don't treat me like shit ... it's time for your ds to start fending for himself or move out Your dad just needs to suck it up and be happy with whatever you make for him

AussieMeg, I routinely use "expired" packaged items like that. Unless it's cake mix (because of the leavening agent getting old and not working), it's always been fine. I would totally use that soup base, without a moment's hesitation.

I'm sure the shower was heavenly, JoP. peano, can you share your cauliflower pizza crust recipe? We fended for ourselves tonight. It was just DS and I again so he had the last burger and we both had Greek salad.

Delta Dawn, I have the pickiest eater known to man, other than leannec's picky eaters. tee-hee. Now that's he's almost 20 I don't cater to him anymore. I try and please him, but if he doesn't like what I've made he's welcome to heat up his own meal or eat cereal. The short order cook has left the building. How about stir fry w/zoodles?

It was just DS and I again so he had the last burger and we both had Greek salad. this is the recipe I used, but it's not even remotely firm like a real pizza crust would be, although the flavor is good. When I get around to it, I'm going to look for a crustier cauliflower crust.
