I need to take a salad to a ladies' luncheon tomorrow. Right now, NOTHING sounds good to me. I am hot and tired! So, I may just pick up two pounds of chicken salad from our local deli (it's good) and add grapes, celery and pecans to it.
Does anyone have a better idea? Surely someone does!

Bag of lettuce?
Seriously, I enjoy a nice green salad. No cheese, no nuts, no fruit. A nice salad with a good lettuce, celery carrots, cucumber, green peppers...just a plain old salad.

I'll knock out your carrots and celery and insert onion (just a little for all you people who get paranoid) and tomato!

Sorry, I forgot our smelly friend the onion and the lovely nightshade. OOPS!! (BAD vegetarian! BAD! BAD!)

Tomato and mozzerella (caprese) salad. Tomatoes are soooo good right and this one is so easy to make.

I like to do a three bean salad with dilly beans (pickled green beans), a can of garbanzo beans, a can of kidney beans, and a marinate sauce.

OMG I read that whole Jello shrimp frosting salad - please don't ever make that. Don't even click the link. It looks like she's stirring up a bowl of vomit.
We've been on an Asian/Ramen salad kick lately, with a little hot sauce in the dressing and some roasted edamame. It's pretty easy, just a couple of bags of cole slaw mix and the ramen noodles.

Summer Corn Salad is really easy to make and very good. Another plus. You don't have to worry about killing anyone if it sits out because there is no mayo.

That Jello salad with shrimp frosting - YUCK! Who thought that was a good idea?
I say - how about a fruit salad. I'd put a small bowl of vanilla yogurt next to it if they wanted something to mix with the fruit.

Bwwwaaahaha! I love the jello salads. Unfortunately this is a group I will see twice a week for the duration of the school year. I would never live that down. Thanks for all of the suggestions. I think I will make the Chinese chicken salad!
