We're having my son's family birthday party Saturday. I finally got him to tell me what he wants for dinner--taco bar. There will be 14 of us. What are your best taco bar ideas and recipes? I've never done tacos for a big group, just for the 3-4. And, I've always cheated and used the seasoning packets.
I probably should also say that the recipes should be flavorful, but not hot. DH's half of the family prefers the really bland crap that I don't think even counts as Mexican. We're in Southern California, so availability of ingredients isn't an issue.

I would do the normal toppings...sour cream, lettuce, tomatoes,shredded cheese, salsa (mild and medium)..then I would do some other stuff like peppers, onions, jalapeños, I also like rice in mine.

I personally would do a taco/nacho bar with the following: Seasoned taco meat, beans, cheese, lettuce, onions, tomatoes, nacho cheese, chips, tortillas, taco shells, olives, salsa, sour cream, jalapenos and guac.
That gives everyone the option or doing tacos or nachos.

There is no shame in taco seasoning packets at our house!
I'd make both ground beef and shredded chicken for the filling, keeping warm in crock pots.
Black beans and/or pinto beans as well.

I have a great recipe for salsa. I based it off the Pioneer Woman's Restaurant Salsa, and added a few more things
1 jalapeno pepper (de seeded)(we like it mild, you could add more of these in) 1 Anaheim (or hatch chile) pepper 1/2 yellow onion Juice of 1 lime Cilantro (to taste) 1 can (15 oz.) whole tomatoes 1 can (15 oz.) diced tomatoes with green chilis (ro-tel) Add all of this to a blender and pulse until small chunks; then add: 1/2 yellow onion, diced 2-3 tomatoes, diced 1 can fire roasted salsa (I buy Safeway Kitchens brand) Mix, but do not blend. The last 3 ingredients are intended to add chunk and texture to the salsa.

You might want to include a couple of side dishes - maybe Mexican rice and/or refried beans. You could just pick up some Rosarita beans from the store to keep it simple.

Are you only doing shredded chicken and or ground beef? Or will you have Carne Asada (chopped meat)? If the later then definitely pico de gallo, shredded cabbage, cilantro and limes for street tacos with corn tortillas. Easy to prepare and serve.
Also agree with simple sides. Typical rice, beans - pinto or black beans with cotija is delish.

I found a recipe for barbacoa that sounds delicious, so I'll make that. I also plan to make shredded chicken, but I'm having trouble finding a good recipe. I'll also be looking for good Mexican rice and refried beans recipes. I can't stand canned refried beans. Seasoned pinto beans might be a good alternative to refried beans.

Seasoned pintos would be much easier. Barbacao would be great. Reminds me to make our families' recipe, it's 100 years old at least. Ok now this pregnant momma craving good old family food.

Corn bread! Easy to make, but if you don't have time, Sam's club has some pretty good bread and it comes in little loaves.
