I'm making apricot cardamom popsicles with coconut milk. The recipe calls for bourbon but I only have VSOP Brandy and Jim Bean Whiskey. Which would you recommend I use?
There's a law that says you can't buy just one shot sized bottle at the liquor store, you have to buy multiple ones so I can't just go out and buy a tiny bourbon bottle, just a mid sized one that would then sit around for years like these two bottles that I have for cookies.

I'd use the whiskey. Whiskey and bourbon are made from grain, brandy is made from fruit, if that helps.

Bourbon is a whiskey, so I'd go with the Jim Beam.

I know the Jim Beam is bourbon, but I kind of like the sound of brandy with the apricots

Well, I like bourbon but think Jim Beam is nasty, so I'd use the brandy in that recipe.
