I go to Roatan at least once a year, usually more often. My last trip was May and I will probably go again in October. My sister bought a beach house that's on CocoView Resort. She goes down for 3 weeks at a time about every 2 months. She rents the ground level of her house and the upper level is private, which means I always have a place I can stay. Send me the name of your restaurant and she will definitely stop by next time she in in Roatan. I love it there. I quit diving after 30 years several years ago due to health reasons, but I still enjoy snorkeling there and just being on the water. She will know of Little French Key, and Foster's in West Bay. These are the restaurants my husband will be running. I have only Scuba dived once, but we plan on getting our certifications. The snorkeling is amazing enough, though. So beautiful. Ive been to Foster's. I haven't been back to Roatán to dive for a while but a friend who goes quite regularly says that he has seen a huge increase in lion fish over the years. If I were opening a restaurant there, lion fish tacos would definitely be on the menu. Besides the fact that they are both plentiful and unbelievably delicious, the dive community will love you for it.

My husband and I haven't been on any trip together since 2004. I told him on our 20th, in 4 years, we ARE going somewhere. This...this just might be the perfect spot! Enjoy your new adventure!

Sounds wonderful! I'll bet you will all enjoy this experience and it will be enriching for your kids to see how a different culture lives.
15 years ago I sold most of the things in my home and moved to New York City. It felt so much lighter, and I didn't miss much of what I'd left behind. Enjoy the experience!

Wow, so cool! I know it's hard to give up your dream job for your husband to follow his dreams. I hope everything continues to go well. We packed up in 2011 and moved out of the country for 3 years. We haven't made the move back yet

Dalai Mama lionfish tacos are absolutely going on the menu. So delicious. There are places where you can bring your fresh catch and they'll cook and serve it to you. They really have become a nuisance, thank goodness they're so tasty! TY! I really think that creating a commercial market for these pests is an essential step in the long-term health of the Caribbean reefs.

I remember reading on cruise critic about how upset the owners where when they took the jaguar n lion n monkeys... i hope all of that is better if it's the same place...
we are going to Roatan in April but we always just stay a the free carnival beach...

It's a huge undertaking, the restaurants he's taking over, while at the same time renovating another and trying to fit in family time as well. We will hardly see him the first few months bit when he gets the right people in place so he doesn't have to be there 24/7, he'll have more time for us.

Yes it is. They are back, though. He is not involved in that side of the business, however. From what I saw they seemed to be well taken care of.

How exciting! Will there be any opportunity for you to continue your career while you're there, or will you be on hiatus for a while? I can work after I apply for and receive residency, but there is no NICU here. The resources at the local hospital are very slim and we are lucky there is one at all. My plan is to volunteer at a local clinic run by an American nurse. She is very busy and desperately in need of help, so I will volunteer with her pediatric clinic. I'll keep my licence current by keeping up with my CEUs and my former boss has told me that if we return to Charleston, I can return to work there (barring a budget hiring freeze, we always needed more nurses).

I love Roatan - my favorite place to snorkel. We've been 4 times (on cruises) and will be there again in March. DH and I have talked a couple of times about just selling this house and moving somewhere else. I always bring up Roatan. Is there a fairly large expat community there? Just getting him to move from TN to FL was difficult... but I'm still hoping that the second move might be easier
